Mashed potatoes with corned beef, gherkins, onions and of course beetroot. All mashed together and served with fried eggs and herring.
Yes white sausage is cooked in water. The chives aren’t necessary and are just for decoration purposes in restaurants. Btw I don’t understand why foreigners always say that pretzels-Brezen are eaten with sweet mustard. That’s nonsense and no German does it. We eat it either just as it is or with butter. The Bratkaroffeln are fried in a pan with onions and optional with bacon. There is no cream. It isn’t even similar to the French gratin. Gratin are also sliced potatoes but as you mentioned with cream and made in the oven. The liver dumpling isn’t comparable to any other dish with liver, it tastes differently. Sometimes Germans are called krauts or potatoes. Potatoes isn’t that wrong, we eat potatoes in many very different variations. Especially at the North of Germany. The closer you get to the South of Germany the side dish varies more. Dumplings and a lot of pasta not only the special German Spätzle. Since Germany has many borders with other European countries there are big regional culinary influences from the neighboring country.
Well, when you eat the white sausages with pretzels, then you do eat the pretzel with sweet mustard. But yes, without the white sausage, pretzels are not eaten with sweet mustard at all.

I actually hated it until the age of 14, now I love it.
Fried with apples and onions, or with onions, sage and red wine. And with mashed potatoes. So good.
A "Frikadelle" is in most cases not pork, but half beef half pork meat.
Fun fact : You might lose wight in Germany as a lot of Americans stated after visiting my country.
Why ? Our portions are smaller but due to the quality from freshness to NO or only legal PRESERVATIVES or GMO or HORMONES you will be satisfied with the portions ! And I am not even talking about organic food !!
And in case you managed to visit do try veal liver ! You will be surprised how good it tastes !

about the water - you could just drink the tabwater in Germany - you wont taste any chlor (was a reason why i drunk all my softdrinks in the US without icecubes even they melted and everything tasted like swimmingpool)
When you go to a restaurant for lunch or dinner or Biergarten, you will stay there minimum for an hour. Cause it´s our culture! And no one comes a few miniutes and ask you are you ready. You stay how long you want´s.
The traditional Sauerbraten is actually made of horse meat, but nowadays eating horse meat is frowned upon, so most people resort to veal.
In fact, there are still horse butcher shops in Germany that process horse meat. And to be honest, I don't see anything bad in that, we value animals differently, but is a horse really worth more than a cow that we slaughter without hesitation?

Hello D, the white sausage is like Viennese or Frankfurt or hot dog. It is cooked and made from veal. We use sweet mustard here. When it comes to schnitzel, there is pork, which is Viennese style, but veal is called Wienerschnitzel.
As a non-Bavarian German I have to admit: I've never in my life eaten a Weißwurst or Labskaus in almost 4 decades.
I tried Labskaus once and it was disgusting. Ok, maybe not the best idea to try it in a Bundeswehr cantina but I hate beet root.
Not Bavarian but I eat Weißwurst from time to time.
When you put enough of the sweet mustard on it, you won't taste the sausage. 😀

He forgot Auflauf, casserole, it can be sweet, based on bread and milk with apples or cherries, or savoury with noodles, ham, egg and cheese, then baked in the oven, and it is always deeeelicious.

Hello D, we have the highest concentration of beer brewers in Franconian Switzerland (that's in Bavaria). But we have a lot of young brewers again. By the way, there is also red beer or Whisky beer from Franconia. It's called "Smoky George" from Rittmayer Brewery. Because of food we also make eggs with bacon. But there is also liver loaf.
I think the scenery a lot ist from "Bamberg". This is really a very beautiful city.
By the way, Budweiser is originally a Czech beer and the original Czech Budweiser is a very good beer.
"How can I find these restaurants?" They are right in the middle of the city center. You practically walk past them, not to say you stumble over them. And Google Maps works just as well here as it does in the US (perhaps sometimes with slower internet).
Who dips pretzels in mustard? Americans do - but Germans? Cut and buttered with some chopped chives or just plain without anything, yes. But dunked in effing mustard?

Hello, Freiburg is very close to Alsace (France). I'd advise you to discover a place where I was lucky enough to go over 40 years ago (even if I had to drive 600 km in a military truck at -25°C in the middle of winter to get there and back) during my military service, Mittenwald in Bavaria in southern Germany, very close to the Austrian border. Weißwurst is not fried, but boiled in water, like a Bockwurst or Wiener.
Simmered, not boiled. It is a very delicate sausage that would burst if boiled.

Hello, you know I come from Thuringia and Mark is right, the Thuringian Bratwurst is the "best bratwurst" in the world. Of course the other bratwursts and all the "German dishes" are yummy.

Actually, budweiser, which is in America, is banned in Europe because it is not the original beer, which is first brewed in the Czech Republic and this company is the only one that has the right to produce this beer, check YT, there is a video about it. I definitely recommend having an original Budweiser in Europe.

I figured something else was missing
Pork knuckle is not fried. I don't like offal, I haven't eaten it for decades, just a few months ago I had a canned dish with liver, I wanted to see if I liked it as much today as I did as a child and yes, I could eat it with difficulty, I like a lot of meat, but I would have preferred less liver and more rice, I don't have to have it, but I would like liver sausage and liver dumplings. The taste is not reminiscent of fried liver. So significantly better. When I was around 13 years old, at a confirmation there was brain soup, I didn't know that and I tried it, couldn't eat it, disgusting, only then found out it was brain. I'm not sure anymore, but I think pig brains.
