I did this recipe tonight for the first time i've ever fried fish or anything in oil, it turned out amazing, the best fried fish i've ever had by far, I paid like $30 for some fried cod at the airport before I worked my shift in Alaska and compared to my first time, it was nothing, the cod I bought from the store was $25 for two pounds and it made like almost 4x more fish than they served me. Delicious recipe, I have to make this again but I will buy only one cod filet as two lbs is way too much for one person, I could have made a dinner for 6 people with this.

You can use cornflour or potato starch to replicate the effect of lowering the gluten content of the batter, though the texture won't be quite the same as rice flour.
Just tried a simplified version. Flour, baking powder and salt. Superb but for the litre of olive oil needed to prevent it resting on the bottom of the pot

Dumb question - what do you do with the oil when you’re done? I never poor it down the drain due to long term damage to pipes but please let me know an easy way to get rid of it responsibly. The fish looks really good!
I don’t like beer either but I do like beer battered fish so I would suggest trying it before writing it off but otherwise, any carbonated water or carbonated juice, or Apple cider. It’s the carbonation that keeps it light. Also, whichever you use keep the liquid cold, even to the point of adding ice cubes, the reason for this is that you have far greater quantity of bubbles under cold conditions.
@@MaZEEZaM yep, the colder the batter is, the more rapid the heat expansion of the bubbles & the better the crunch. I normally use soda water if I'm not using beer, but if you're doing that, add a tiny amount of tumeric to help add some colour to the batter, unless you don't mind it being very pale. Another thing you could do is add some brewers yeast or nutritional yeast into the batter to get something similar to the rich savoury notes that beer adds. Yet another thing you could do is make a fermented batter recipe - but at this point it's a fundamentally different recipe you're making, the texture will be completely different. Beer really is the simplest option though, it really doesn't taste or smell like beer at the end, the effect is more like the smell and flavour you get from nicely risen & baked bread, so I'd also recommend you try cooking with it first before looking for alternatives.

@Joanne R I was originally going to suggest soda water but that has quite an distinctive flavour, one I don’t personally like. So, soda water being carbonated certainly works but only if you like that taste.

You do not need measurements for a beer batter surely, you can see how much was used if you really had to go and rewind every step, don’t make a Thai curry if you can’t handle this 😂

You can use corn flour instead of rice flour. Also a bit of turmeric for colour is a bonus as well

The alcohol will evaporate so don’t worry it will not mean you drunk beet and yes regular flour does the job too :)

Your oil probably wasn't hot enough. If it's too low, it will be soggy and greasy.
