One had you doing it in 10 minutes and called for egg whites and regular flour as well as other ingredients but the other videos had you using a completely different method with 00 Flour and Rice Flour as well as adding more ingredients than the first recipe. Which is best?
The link to the batter recipe lists 1 tsp baking powder in the list of ingredients. But the directions say "Now mix the rice flour, the flour, the salt, the baking soda, and the sugar in a med-sized bowl. after, add in the soda water and the larger beer." is it baking powder or baking soda that is required? Also, in the video he says the secret is the flour eggs and beer. I don't see eggs in the written recipe.
Baking powder mate. Only use baking soda when a recipe has something acidic, like lemon juice/zest. Otherwise it doesn’t react. Baking powder will just react with heat. I think the eggs was just a mix up; they’re a common, but in this circumstance unneeded item for frying.

For an amazing taste sensation sprinkle black pepper and a pinch of sea salt on warm mushy peas (eat with the fish). Drizzle a little malt vinegar over both fish and the chips. Make a "Brown Sauce" (popular in Scotland) by mixing HP Sauce and malt vinegar together (use as dip for the chips and of course a side of Heinz Salad Cream. Ketchup and tartar sauce is more an American thing. Oh and when you heat up the mushy peas instead of water use a little beer or fish stock!

Great instructions right upto the point he cooks the fish and chips in oil. Proper fish and chips are cooked in lard or beef dripping. That way you dont get the rancid veg oil smell and taste.
Here in both Australia & New Zealand in our Fish & Chip Shops (Chippies) is that NOT Only we do have Battered Fish & Grilled Fish but also Crumbed Fish in which the Fish is fully covered with Breadcrumbs instead of Batter & besides we do also have Potato Fritters which are called Potato Scallops covered in Batter & being cooked like the Battered Fish of course.
I love Gordon, mainly because when I DJ’ed Tana & Angela Harnett’s joint 40th birthday party at Angela’s home in Spitalfield’s in 2008 he said right at the end I was ‘ as good a Dj as he was a chef! ‘ … although he had had a few by that time 😂❤️😊👍

Everything was wonderful till you brought out the tartar sauce!! Where is the Malt Vinegar!! For me it was always the fish and chips, wrapped in newspaper and sprinkled with malt vinegar, made and sold from the stand on the corner, just before going into the cinema to watch a good movie!! Of course that was back in the 1950's, and maybe tastes have changed over there... but my memories are still making my mouth water.... and I'm headed out to do some grocery shopping!!
gordon, huge fan here....i was raised with the paper towel drain on everything coming out of oil. then, finally, i learned the wire rack technique from someone that said, " on a paper towel, the bottom side just steams and ruins your crust"......after trying it, it was like night and day.....so, i am curious, why does a phenomenal chef like you use the paper towel technique?
I think it's good to use the paper towel to drain the oil, but I never leave my food on top of the paper towel for more than a minute, that's when it starts to get mushy underneath. Take out, 45 seconds for the oil to drain on the towel, then straight onto the plate still crispy
I wish I could tell you how good his fish n chips are but I do not have first hand experiance in dining. A few years ago I took a driving trip from Cape May to West Port Conn and passed through Atlantic City. My wife and I stopped in Atlantic City at the Casears' Casino where Gordon Ramseys Pub and Grill was located. This was on a Saturday Afternoon around 1 pm and I am a big fan of Ramsey especially having eaten at a couple of his Kitchen Nightmare Restaurant Locations. I ordered his Fish n Chips and was looking forward to having a favorite dish of mine. Infortunately the server came back and told me they were out of the Fish for the Fish n Chips and asked me to order a different dish. Wow, i have watched just about very Kitchen Nightmare espisode and one of the things I clearly remember was Gordan saying a Restaurant never runs out of thier signature dish! I was excited to see this recipe online and will be making it. I am elated since I grew up in the 70's in California where London Pubs still existed and I ate there most weeks. I only wish I could have met Gordan Ramsey, love his food and shows, always fun and entertaining to watch.

I'd go for a cask-matured beer like Innis and Gunn purely for those distinct flavour notes, or some kind of amber/ruby ale. It's probably hard to go wrong, but it makes sense to opt for something that cuts through the other flavours enough to add to the end product.
North Atlantic Cod is recovering from centuries of overfishing do not be so quick to call it sustainable. You are right about it being best for fish and chips. That was it downfall in the past. You English ate Cape Cod and the Grand Banks. The cod were so numerous when europeans first arrived they described them as so thick you could walk on them

Look too crunchy like a lot of the Australian fish shops. Back In New Zealand most shops have good softer batter. Crunchy usually oily too

Dude, tartar sauce is traditionally served with fish. I've not been to a chippy in my entire life that doesn't sell a pot of tartar.
