醃嘢應該用最小空間,譬如密實袋,可以醃到更均勻也可以避免浪費調味料。
我之前睇video嗰陣睇到你嘅comment,今天試麥花田呢個整法嘅時候,因為整嘅份量比較多,所以密實盒唔夠位,突然醒起你個comment,用左一次性嘅食物袋封到實一實,真係完全cover到晒,再擺落個密實袋度防漏(因為我係擺過夜第二日先整)整嘅時候夾完肉之後,直接喺底嗰度剪個窿仔淋汁出嚟,啲汁基本上物盡其用冇點哂到,多謝晒你嘅建議

其實做得有少少錯, 肉片應該放碗邊, 唔洗咁醃, 扣係將醬汁同梅菜蒸嘅時候滲入肉內
翻查書本及網上資料,從來未見這個「扣」的詮釋。

油炸工序可唔可以用氣炸鍋代替呢?
可以,但味道都係真油炸好少少。如果用氣炸鍋,印乾水分後,每邊塗少少油先氣炸,效果會好啲。
可以半煎炸,有易潔鑊嘅就四面辣到佢出油,炸嘅目的主要係迫走本身嘅油脂同埋將個皮炸成虎皮,肥而不膩嘅原因就喺呢度。
