    After squeezing out the seeds, collect them in some kitchen towel d leave in a warm dark place to dry. Store until next spring and then tear the paper towel into small bits, each with some seeds, and plant into pots or seed trays for another crop of tomatoes.

    I just did this recipe today and man is it so worth it! I originally wanted to do it the traditional way of leaving them out in the sun for about 5 days but we have flies around and I didnt want to bother with building something to house them from the bugs so I did this and man is it good!!! I put them in a jar with olive oil and decided I would toast some bread up and try one or two on it. Oh my. Sooooo good. This is going to be a summer from now on, pick and save as many roma tomatoes as I can and fill up the oven. I sprinkled salt and basil on them before putting them in the oven and they are amazing!

    The people complaining about lack of sun in this vid are the same people who think that when they buy ”sun dried” tomatoes at the store that they were actually sun dried.

      xxx xxx Exactly "how" do microwaves (millimeter wavelength electromagnetic waves) destroy nutrient molecules??? Microwave ovens operate around 2.4 GHz frequency. This frequency range of EM radiation interacts with vibrational modes of molecules, and microwaves oven [magnetron] frequency is tuned to match and cause resonance in the vibrational modes of water molecules specifically. The increased vibrational energy eventually gets "coupled" or transferred to translational (speed relative to a frame of reference external to the molecule) energy modes of water molecules as well as vibrational thence to translational energy modes of other molecules in the food including the vitamins etc. Importantly, the molecules never have enough energy that their constituent atoms fly apart i.e. covalent chemical bonds are not broken. To break molecular bonds higher frequency EM wave such as UV is needed, so in fact UV can destroy some vitamins and DNA (the latter important if you wish to kill living things such as bacteria/viruses). So the end result of irradiating food with microwaves is that the molecules start dashing around faster BUT...they REMAIN chemically stable. It is this increased in speed of the molecules that we "measure" when we talk about the substance/food heating up or increasing in temperature.

    I use the cooling fan output from my laptop to dry stuff. I make a little "oven" out of 2 egg-box lids and let the hot air blow into the bottom half with the tomatoes, shrooms, basil, etc. on a little grill/mat in the top half. It gets up to about 50ºC in there and it works great! I've only dried cherry tomatoes and it takes about 24 hours or so. Larger toms would take a few days, probably.

    I can't believe how sarcastic some people are, this was a great help, usually you dry tomatoes when you have an over abundance of them. It's much better than letting them go bad. And a great help later when tomatoes are very expensive. Great in soup, salads, tomato sauce etc. I pack mine in olive oil and sometimes add garlic, you can add whatever you prefer. Thanks a bunch

    Its supposed to be for those who grew excess tomatoes or other vegetables that couldn't be used lest it spoil, so they'd sun dry foods in order to have plenty during scarce times. The wonderful thing about it is they actually taste delicious and foods that were once poor mans food is actually are sought-after rich man's delicacies. God always can turn a bad situation into a blessing. 💜💙💛🧡❤💚

    This is great. Once the hot weather gets here though, I'll use the same "recipe" but place the sheets in the rear window of my car. Really does a good job!

I also have a dryer /dehydrator for veggies and fruits, and tried preparing tomatoes there, but the result was not what I expected. Too dry.. .I'm gonna try oven and the sun this year.

    Yes.The sun-dried tomato is not "cooked" above 40 °C so the vitamins, minerals and enzymes it contains aren't destroyed (high nutritional value).In fact,the amount of antioxidant lycopene in sun-dried tomatoes is increased (24787μg per cup).The "oven-dried" tomato is oven-cooked NOT dried.Drying and cooking are two different processes(under different temperatures) thus the different name.The "oven-dried" tomato has less lycopene(7298μg per cup) and smaller concentration of vitamins and minerals.

      I was thinking I’d use them in stock? I freeze vegetable peels, herb stems, etc. When my freezer is full I clean it out and make chicken or beef bone broth!

    I tried this last year and it worked great. I used my 'Juliet' cherry tomatoes cut in half. The 'Juliet' cherry tomatoes are quite a bit larger than most cherry tomatoes. After roasting I placed them in a jar and covered with olive oil. I roasted several more batches, cooled them, then placed them in a baggie and frozen them. As I needed more, I thawed them and placed them in a jar of olive oil. I am now harvesting this years Amish Paste and oven roasting them. I will also be doing my 'Juliet' cherry tomatoes, since I always have a surplus of these beauties. Thank you for sharing your recipe. Smiles, Lark

    People complaining about electricity should know that the oven will take at 200 F at max 1 KW per hour that means it will usr 7 units in 7hours. That will be 90 cents or a dollar in electricity. That is not a big price to pay to speed up the process and also preventing any moulds from coming onto it.

    Sun-dried tomatoes, reconstituted in chicken stock and layered with fresh mozzarella and basil, toasted on a baguette is a GREAT sandwich!

    Thank you for your question! We'd recommend storing these sun-dried tomatoes in the refrigerator, in an air-tight container. You can store them in olive oil as well, if you prefer. They should keep for 5-7 days. Enjoy!

    Tbh I can’t sun dry my tomatoes anyway I live in the UK they would just be soaked with rain water lmao. I prefer the oven method it’s more convenient and realistic for me: thank u

      I think you forgot to mention to turn off the stove before putting the tomatoes inside the oven. Some ovens also have both 200 Celsius and Fahrenheit, I was assuming it's Celcius if I have to turn the oven off but good thing you mentioned in a comment it is Fahrenheit. If we really have to keep the oven on for 7hrs, then I can't bec. my oven can only handle 45min. of use at a time based on the manual. We, ordinary cooks just take everything as is, so I hope you can be more specific, but thanks for sharing ! :)

    I remember when allrecipes was like THE go to channel for recipes.
    I've found another hands off oven method where you set the oven to 400F and put the tomatoes in for 15-20 mins depending on size and after just turn the oven off and do not open it for 2-3 hours.
    The residual heat as the oven cools gradually helps dry them out.

    Not technically "sun dried" now are they? Real sun dried tomatoes are actually dehydrated in the sun. However this is a good technique if you don't want to go to that trouble. Additionally, you could use a dehydrator to get a similar result and a longer shelf life.

    If you read the header above, it clearly say "in your oven". Have you considered what would happen to your wonderful tomatoes as birds flew over and dropped a their waste on them. I've dehydrated foods (tomatoes, mushrooms, zucchini, onions, fruits, etc.) both in doors and out, the flavor difference is not the issue!!! (P.S... I'm really disgusted that some of you started making rude remarks and others jumped in. In my world that is called "bullying"!!!!)

    Apparently most of the "sun dried" tomatoes we buy are actually oven dried. There is no difference in the flavour.

    A small hack to make these with almost zero energy consumption is to use a solar oven if you don't know what a solar oven is do a RUclips search.

    ave. 200f for 4 hrs, 230f for 3 hrs(big tomato piece) or 2.5hrs(small tomato piece)

    This also applies to any type of sun-dried tomatoes that contain other ingredients. Fresh herbs, spices or garlic, naturally contains bacteria that will multiply as soon as they are exposed to heat and moisture.

    I don't understand sun dried tomatoes, or even fried green tomatoes. I like mine ripe, and sliced for a sandwich or diced for a salad.

      just store them on a cool dry place like inside a refrigerator and I think they are essentially good forever

    Seven hours in the oven is an enormous waste of energy when you could just leave the tomatoes under a window or screen in the sun.

      agree most people can't be bothered. but call a spade a spade, how to dry/dehydrate tomato in an oven.
      it's only practical/easier if you're doing a small amount, me i ain't as normal, grow 100's of lbs of tomatoes and wanna dry big batches in the sun,less time,labor and cost than an oven.

    Make the tomatoes on the cookie sheets as shown, but then put the cookie sheets on the dashboard of a car in the sun on a sunny day. You won’t be lying about your sun-dried tomatoes

    So once we put them into preheated oven do we need to heat the oven again or not ??/I didn't get it

      You are just pre heating the oven for 200 degrees. When you finish dressing the tomatoes just put them in the oven for the time. No need to readjust the setting. I hope that helped☺

    i get black stuff on my tomatoe slices after having had them in the dehydrator is that mold?

      Based on what I've read on Dehydrate2Store, I believe the black spots are signs of moisture and will spoil over time.

      Hi, John Williams - You don't need olive oil while the tomatoes are drying. However, once the dried tomatoes are cooked, pack them into jars and then use olive oil to fill up the jar, just covering the tomatoes. The oil acts as a preservative and helps keep the tomatoes fresh. Happy cooking!
