I actually found using thomas's multigrain 100cal english muffins work really well for French toast soaks up the flavors and doesn't fall apart with an longer soak. I'll be trying them with this next 😊

Do those macros assume you use all the batter evently distributed among the slices? In my experience from french toast, there's always just enough left over that you can't fully soak one more slice. So I make it into a sweet mini omelet.
I like how you incorporate cottage cheese into your recipes for extra protein. It worked great with your frittata recipe, looking forward to trying it with the French Toast. I only eat the Ezekiel Bread, so we'll see how that goes- it might need the overnight soak. I've made your applesauce/protein powder version using cinnamon raisin bread for my mom- she really likes it- not the healthiest of breads, but she's getting some protein out of it. . BTW, for ice cream, I love chocolate chip mint and rum raisin.
