how do you connect 2 stero out to one line in in cube?

I don’t think I would recommend this. You would need a Y cable adapter with appropriate plugs like quarter inch and RCA.

Does the mixer help the overall sound?

Yes. With a mixer you can adjust volume and eq which makes everything sound better for the space you play in.
