    To prepare it, we will need:
    600 g cream cheese
    150 g sugar
    200 g cream (30% fat)
    3 eggs
    150 g chocolate
    1 teaspoon soluble coffee
    10 g cocoa powder
    300 chocolate cookies
    70 g of butter
    10 g milk
    We grind the cookies into crumbs with a blender. Add melted butter to it. When pressing, the dough must keep its shape. If the dough falls apart, it is necessary to add milk.
    I 'll bake cheesecake in a cooking ring, and you can do it in a split shape. The bottom of the mold is lubricated with oil, put out dough and cut with a glass, form beads.
    We send to the oven warmed up to 200 ℃ for 5 minutes.
    Meanwhile, we bring cream to boiling, add cocoa and coffee to them, mix well and leave to cool.
    Then we melt chocolate in a microwave with short pulses for 10 seconds, or we do it in a water bath.
    Cream cheese and sugar are mixed by hand or mixer at minimum speed. If lumps remain, you can wipe through a sieve.
    In the cheese mixture we pour chocolate, add one egg and thoroughly mix, but do not beat - air bubbles to us nothing. Finally add cream with coffee and cocoa.
    Pour this mixture onto baked cords. We will bake without a water bath (as is common in traditional recipes). We send cheesecake to the oven warmed up to 200 ℃ for 15 minutes. Then we reduce temperature to 110 ℃ and we bake 1 hour.
    Now it is important to cool our cheesecake correctly so that it does not crack: turn off the oven, open the door a little and leave for 1 hour. Then we get it out of the oven and leave it in the room for 30 minutes.
    We separate the pie from the walls, but we do not take it out of shape. We clean in the fridge for the night - the next day the cheesecake will seal, it will be easy to cut.
