    Ingredients
    70g Pistachios Nuts
    30g Almond Nuts
    30g Cashew Nuts
    75g Egg
    80g caster sugar
    1/2 teaspoon baking powder
    Pinch of salt
    200g Low Protein Flour (20g corn flour + 180g plain flour)
    Instructions
    1. Preheat your oven to 170°C and line a baking sheet with parchment paper.
    2. Toast all of the nuts on frying pan.
    3. In a separate bowl, beat the eggs and sugar until well combined.
    4. In a large bowl, whisk together the flour, baking powder, and salt.
    5. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
    6. Fold in the toasted nuts until evenly distributed throughout the dough.
    7. Divide the dough in half and shape each portion into a log, roughly 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, leaving space between them.
    8. Bake for 25 minutes or until the logs are firm to the touch and lightly golden.
    9. Allow the logs to cool for about few minutes, then transfer them to a cutting board. Use a sharp knife to slice the logs diagonally into 1/2-inch thick biscotti.
    10. Arrange the biscotti back on the baking sheet, cut sides down, and bake for an additional 20 minutes at 150°C until they become crispy and golden brown.
    11. Cool completely before serving. Enjoy your nutty biscotti with a cup of coffee or tea!
