I recently started doing this and I was absolutely amazed ... there is a (relatively famous) RUclips Chef named Jean-Pierre ... absolutely love that dude - and I saw him in a video insisting he made the vegetable stock from scraps of vegetables ... and one day I decided, "What the hell..." and from literal scraps - the ends and trimmings I would cut off (and throw out!) of onions, carrots, celery, even a few nibs off a garlic clove or two I had trimmed ... I was absolutely amazed at the results! Totally converted now. And it freezes fine - so it's perfect for pulling out when you need some for something else. Anyway thanks again love your videos.
Thank you. I must admit, that’s how I got started making my own. A RUclips friend showed how to make broth and like you I thought to give it a try. I was amazed at the results. Now, I may pick up a carton or two to have on the pantry shelf, I always save scraps to have some in the freezer.
I learned this from my mother. she also would put left over veggies in a freezer container and when full make vegetable soup. Very frugal.

Absolutely. You would just let it simmer about eight to ten hours. Taste it and go from there. That’s certainly a way to set it and forget it.
Do you freeze the scraps until you have enough for broth?
Yes. I put them in a freezer bag and save them until I have enough.
