How to make LMF Fondant (marshmallow fondant)

    A lot of people have been asking me how I make my marshmallow fondant so here it is! My secret recipe revealed. If you've ever made marshmallow fondant and hated the results, or if you hate the taste of store bought fondant, you'll understand why this recipe works so well.
    MOST ASKED QUESTIONS: These questions have been asked so many times, I've stopped answering them because well, my hands hurt and my brain hurts from re-typing the same thing over and over so here they are
    1. Why are you using fondant to make fondant?
    This question is usually asked in a very snarky way and to be honest it annoys me but I will answer it anyway and try to keep the snark out of it. Cheap store bought fondant (like the one we use in this recipe) is not pleasant to eat. It is stiff, it cracks and tastes like feet and cardboard. Store-bought fondant that tastes great starts at about $40 for 5 lbs which is pretty dang expensive. This recipe is the best of both worlds. Great taste, works great, costs about $12 for 4.25 lbs and takes about 25 minutes to make. If you don't like the recipe, you don't have to make it. Simple as that.
    2. How do I store the fondant? I store my fondant in ziplock bags at room temp. They last a long time that way. Mine have never gone bad so I don't know exactly how long.
    3. How do I make black fondant or a dark color? Substitute 1 Tablespoon of water for food coloring and add during the water step.
    4. How do I color the fondant in batches? Add a small amount of gel food color to white fondant and knead until even in color
    5. Can I make a half batch? Yes
    6. Can you taste the wilton fondant? No. It's a very small amount.
    7. How many cakes does one batch cover? I have been able to cover a 10" - 8" - 6" cake many times because I roll the fondant very thin. Your results will depend on how thin you roll out the fondant.
    8. How Long can I make this in advance? Weeks. Re-heat and knead until smooth before each use.
    9. What if I can't find Wilton fondant? You can use any sort of pre-made fondant
    10. What is the powder you add to make figures? It is called tylose but you can all use CMC powder. Google it.
    11. Can I use Jet puff, Marshmallow fluff, colored marshmallows, flavored marshmallows etc instead of the brand you recommend? Some people have had success with Jet Puff but it doesnt work for me. I have heard that walmart store brand and haribo marshmallows work great as well.
    12. What if I can't find crisco? You can use Trex
    13. Can I make this without a mixer? Yes, just mix by hand in a large bowl
    14. What if the mixture is crumbly? Then you may not have used the right amount (1 lb) of marshmallows or the right brand. If the marshmallows do not puff or dont mix well with the sugar then you have the wrong kind.
    15. What happens if I don't add the extra fondant? This recipe on it's own will be soft and will crack when you try to put it over a cake because it will lack elasticity.
    16. Can you make it chocolate flavored? Yes I mix equal parts modeling chocolate and fondant together.
    17. Do I have to use a hook on my mixer? Yes, or you have to make it by hand. If you use a hand-mixer or the paddle attachment, you'll most likely break your mixer.

    Elizabeth Marek's Fondant Recipe
    2 lbs sifted powdered sugar
    1 lb mini marshmallows (hy-top, walmart brand or haribo brand if you can find it. Jet puff, kraft or marshmallow fluff will not work) Make sure your bag says 1 lb or weigh out 1 full lb from two bags
    2 Tablespoons water (or one if its really humid in your area) *new water amount for use with new wilton
    1/2 cup Shortening (or trex)
    1.25 lbs of Wilton fondant or any other brand pre-made fondant (if you buy the 5 lb box, use one half of one of the packages, if you buy the 1.5 lb box, use the whole package)
    Extra powdered sugar for kneading

    Tip for shortening put plastic wrap inside the cup before using the cup. It helps for the shortening not to stick inside the cup. This can also be done with peanut butter

    Hello Everyone. Just wanted to share that I just finished making this fondant which took me total 45min including cleaning up dishes. This fondant taste really good and you can feel the quality is awesome. It makes about 4.48lb of fondant. I follow the EXACT recipe & today was the 1st time I made this. I did rolled my fondant out thin as possible and covered on my plate to see if it start tearing. I didn't tear. I love this recipe and I am soooo thankful to Elizabeth that she share with us.

    I have been making my own marshmallow fondant for a while. I've just tried your recipe/technique. WOW. Absolutely brilliant. Easy, no sticky hands and worktop and my kitchen doesn't look like a snow storm has hit. Thank you for putting this video up.

    Er mer gawd! Just made my first batch of this and I'm so thrilled to work with it later this week. Have been making my gelatin-based fondant from scratch from day one since I never cared for the texture of pure MMF nor the taste and lack of elasticity of pre-made fondant.     First off, I cracked up at your use of "sploosh". Secondly, I appreciate you posting this. I made my very first cake last October for my daughter's 5th birthday. Since our son has food allergies, I had to learn to bake things especially with his needs in mind. This means all future birthday cakes are gonna be homemade. But I hated the idea of sacrificing flavor and appearance so started checking youtube tutorials and yours are my favorite. I have now made this fondant recipe twice, plus followed your chocolate ganache tutorial and I just have to say thanks because without your tutes, I would have been lost.
    By the way, no one could believe I had never made a cake before when I revealed my daughters birthday cake. Not trying to brag, but it looked amazing! I credited you every chance I could haha.
    Now I am working on making my sons birthday cake for this upcoming Sunday and just picked up CMC to make figurines for the cake out of fondant. I am excited to model with it since I have been sculpting with polymer clay for years (and while it isn't edible, the textures are nearly the same).

    Just tried 2 recipes. One that entailed corn syrup and this one. This one was definitely better. The one with corn syrup wasn't pliable and didn't stretch at all. But this one worked great. Thanks!!!

    Just an idea for anyone having issues with no elasticity in their fondant even after doing it this brilliant way. I've found that if I add Wilton Fondant as you kneed it right before using it instead of when you first make it, works best for me. I also find that I don't have to use so much. I didn't used to have issues, but products change and I had to learn to adapt to it. Unless you have a better suggestion, Liz. I use Great Value marshmallows as you suggested, but what is the best powdered sugar brand to use that can be found all over the US? Plus, now Wilton fondant has changed too, it seems to work a little different. Would you consider making a new video? Or add to it? This recipe is what saved me from giving up on fondant and so I do really appreciate all your hard work.

    Just tried the fondant oh my what a fantastic stuff . Have a lot left over how do you store it ? All I did was put it in a zip lock bag with a little powder sugar the seal it with getting as much air out . I really don't like putting it in the fridge.

    Hi Liz. I was wondering that now it seems like Wilton has changed their recipe for fondant do we have to make any adjustments? Also i just bought your book...super geeked and it says to pull the fondant like taffy but this video doesn't mention it. Is that step a must?

    I tried this recipe exactly your way and it came out absolutely perfect in the end! Halfway through the kneading the fondant became too dry and it started tearing slightly, I guess I added too much powdered sugar. But I added a bit water to it and it became much more softer and it was not tearing at all! Thank you so much for sharing your recipe, saves a lot of money!

    I used this recipe on my friends wedding cake which was my first cake ever to make! I use this for all my cakes now =)
    I've gotten so many compliments on how good it tastes and they asked how I learned to make it, they were amazed when I told them your video on RUclips taught me!

    I finally got around to trying out your wonderful recipe tonight, but had several problems, and was hoping you might have solutions. I made sure to study the video first, and can assure you I got the steps and ingredients correct. But, as my hook kneading concluded, my nice clump of fondant suddenly mushed and adhered to my mixing bowl. This then made it ridiculously hard to remove for the next step, and I ended up with quite a gooey mess. Do you have any idea why this might have happened?
    After mixing the Wilton fondant and the remainder of the powdered sugar, the fondant was still a gooey mess. I moved it to the counter top and kneaded in about a 1/2 cup more of powdered sugar, and ended up finally with non-gooey fondant. Yay! However, it's extremely stretchy and seems to tear quite easily. How do I fix this? Should I just warm it and add more powdered sugar? But again, since I followed the recipe, do you have any idea why this happened? Or is it actually the correct consistency? It seems like I wouldn't be able to roll it thin and put in on a cake like you do, without it tearing. Thanks!!

      Ive tried it too and ended up a real mess, then it was too dry, just couldnt get the right consistency

      Melanie Marinucci It's a touch firmer, but really smooshy. I would have to add lots of tylose to model with it, but maybe it would work for covering a cake? I haven't rolled it out yet, but I'm not convinced.

Sticking to the bowl is normal, you have to scrape it out and finish it in the bowl and then on the table. You'll get cleaner and faster with practice.

    I gave this my first attempt last night for a customer's cake and it was perfect! I am so happy I found this recipe, thank you a million times over! I love that it doesn't dry as quick as store bought and definitely tastes better but I still get the stretch and thickness of store bought. This is great, thanks for posting!

    This is such an EXCELLENT recipe! I watched this video many years ago, and have been using it ever since! You can add flavoring to the melted marshmallows too, as she said, which blends it well into your flavor profile. So delicious as is however. Thanks so much for sharing your recipe!

    I love how this tastes!! I live in South Africa where hydrogenation is illegal due to the health damage it causes so we don’t get shortening but we do have products close to it! I found I don’t need the water and I used a lot more than 2kgs (1lb) of powdered sugar. I love how this tasted and how it behaved benign a ton more elastic which is a godsend seeing as our hot and dry climate makes fondant here dry out instantly causing unsightly elephant skin! Thank you Liz your techniques and tips are a life saver!!!

    Liz, just a personal message to tell you how much I appreciate your talent and all of the information you share with us. I have learned so much from your videos. You are like the only major cake person I follow. Don't know what's up with Juan but personally think he should keep moving.     I made this for the first time and it turned out beautifully. I had no trouble getting it nice and thin and transferred onto 2 round cakes. I was never able to do this before without alot of trouble. I will never do it any other way. I'm not a professional and I make cakes for our family special occasions. I wish I knew about this recipe a few years ago... it would have saved me a ton of grief. Thanks for sharing.

    Just wanted to thank you for sharing this recipe. I love it even more now that you showed us that you add regular fondant as well. The elasticity is so much better now than with just the regular MMF. The best part is it still tastes like marshmallow even with the other fondant mixed in with it. Thank you again.

    thanks for sharing. For Amy Grace, use a measuring cup that the bottom is rounded and not flat and your shortening or other ingredients, such as you peanut butter, will scoop right out in one piece if your use a flexible spatula to scoop it right out in one clump. Works beautifully.

    Thank you for posting this video! I tried this once without a Kitchenaid mixer.... it didn’t work but I also didn’t have the right marshmallows! Other day I tried it after buying a kitchenaid mixer and I was skeptical that it would work but it all came together! I can’t tell you how accomplished I felt! Lol! Yday I tried the fondant on a dummy cake and yayyyyy it worked! It tasted so good too! So soft and better to work with than Wilton reg fondant. Thank you again for sharing!

    Made for the first time and covered a 6 inch high cake. Lovely and stretchy and any flaws rubbed out instantly. I have made another marshmallow fondant and found it too stretchy. This is a perfect balance. Living in Canada, I could not find your marshmallows but just used Walmart brand. I think my fondant was a little stiffer than yours but a few seconds in the microwave solved that. I ordered your book based on how useful I find all if your videos. It is getting amazing reviews on Amazon.

By the way, I made a teacup last night with just straight LMF (no added CMC) and I am now making some roses with your LMF recipe (with no added CMC). I live in the UK and use Waitrose fondant instead of Wilton, and it already has a little CMC in it but they have all turned out REALLY well!

    Thanks for this. I tried it today and apart for a kitchen covered in a cloud of icing sugar the fondant turned out really well. I wasn't as neat as you but I am really pleased with the end product. Thank you very much for sharing your special recipe and method.

    Made my first batch of MMF tonight following your recipe exactly and it was a success. Thank you for your time posting this. It is strong, I can roll it thin, and it tastes great! I was skeptical of the taste adding the Wilton fondant because it tastes so terrible, but you cannot taste anything but deliciousness. This will be my go to fondant recipe from now on.

    Oh my gosh!!! Just did a test cake with this recipe, I'm in heaven!!! Covering a cake in fondant is always my most stressful part when making my cakes...no more!!! This did not have ANY elephant skin and did not tear at all!!! This is life changing, lol. Thank you so much for sharing this recipe!!! If anyone is in doubt, I'm telling you it's the best fondant ever!!! Just FYI - Target Market Pantry brand works great. Raley's brand does not. Try it, you'll love it!!!

    And for the WIN... my first go at making my own fondant and it was easy, awesome great in every way. I had to colour it but added colour after is was made because I only needed small amounts of some colours and it was way faster and easier to knead colour gel into this that into store bought fondant. Thank you thank you thank you.

    thank you for your detailed video tutorial. I followed your instructions but couldn't source the exact same ingredients in Australia so used items as close as possible. Everything was going great until I got to the part of getting it out of the bowl the work with. It kept sticking terribly to my hands and the bench. I ended up looking online for ways to fix this problem and slot more powdered sugar helped plus letting it rest in the fridge to form up more. It turned out great in the end on my daughters birthday cake, thankfully I didn't give up and throw it all out when it started looking different from your video.

    I can't say thank you enough for this! I've been decorating cakes for 20 years and have NEVER worked with fondant for two reasons: 1. It tastes horrible, and 2. It ain't cheap. I'm not sure how I came across your video, but I watched it twice before attempting to try it myself. Couldn't find the marshmallows you recommended, so I just made sure NOT to use Kraft. lol. Anyway, it turned out absolutely PERFECT on my very first try. It's cost efficient AND TASTES GOOD! You rock! Thank you so much!

    Hi Liz, I don't usually comment on videos, but I just had to say thank you! I'm from Western Australia, where US ingredients are hard to find. I have this a shot with copha & some cheap marshmallows from the reject shop.. total disaster! But I wasn't going to give up. I discovered that my favorite cake supply store sold Crisco (yay!) and I made a trip into the city centre to a US food Mart for campfire brand marshmallows, the giant ones. I used a generic fondant. It turned out perfectly, and I'm on to my second batch for a wedding cake I'm delivering this Saturday. Even my mum, the seasoned cake decorator was hugely imprisoned, having tried and disliked marshmallow fondants in the past. This is my new go to. Thank you Thank you!!

    Thank you so much I am going to try this I started to order the old Wilton from their website but you have to spend about 50.00 to get it. I like hobby lobby fondant because it is not quite as soft as the new Wilton fondant. I started to mix them half and half and it was working out OK. I am very excited to try your way so it is not as expensive and it looks like it works very well. I really enjoy what you take the time to show us. I feel like I am learning so much from you.

    Hi Liz! I LOVE your tutorials, you are a great teacher! I just donated $50 to your IVF fund, I wish I could do more. Hang in there, I too have suffered infertility troubles but do have one miracle baby. Now, you're teaching me how to make her birthday cakes more memorable than ever. It WILL happen for you.
