on the parchment paper i follow your instructions and on the top i used a black office paper clip and it worked and hold it tight, i gave this a try for a princess party and it was a hit thank you for your video it was so easy to follow

Loved watching this.I just watched a video on using sugar to do this. These are so much clearer than with the sugar. She used gels to color her sugar. I would think that you can add this as it is being melted using liquids since you don't stir it. I can't see why you couldn't stir if you had a special utensil that was only used for this. Thank you for making this.

Hey Liz! Do you ever have issue with the gem being cloudy on the surface after coming out of that mold? I use the clear cake play nibs isomalt. The surface in the mold comes out cloudy while the back remains shiny and clear. Thanks for any tips!
+Janelle F are you using a silicone mold? sometimes poor quality silicone can make the surface cloudy. Or the mold could be dirty or wet and cause condensation and cloudiness or your isomalt could be too hot

I've run into a problem its been pretty warm outside and my gems were sweating so I put them in the fridge thinking it would help, but the gems lost their textured look. Any thoughts? If I keep them out, how do I store them?
It is so funny that I have to do some gems today using isomalt for the first time and when I open up my youtubr, this us the 1st video on my feed! Awesome! I just wanted to know, *at what point do I add color? I need to make It light pink. *how long does it take to cool? I only have a mold with 3 gems. *if it cools, can I microwave it to get it soft again or boil it again?
if you need to add color, use a candy thermometer. Add the color at 280. Just a TINY bit goes a long way. Cook until it reaches 325. Pour at 300 degrees into your molds. Takes maybe 10 minutes to cool fully. Spray a little pam in your molds and wipe out the excess so they don't stick. Yes you can re-melt in the microwave.

On your blog you talk about painting the back with luster for extra shine. Could you just dust the luster dust over the molds before filling them? Or would the hot isomalt just absorb the luster making it cloudy?
Can you remelt the jewels and use them for a different application (ie piped designes)? Can you remelt the isomalt in the pan and make more jewels? At what point in the process would you add colour?

I always have problems making my isomalt gems look like diamonds. Whenever I put them on my cake, they blend in with the color of the fondant that I am using on the cake. What do you put on your gems to give dimension and a diamond like look. Thanks so much!

Csipke Mézes it's normal...store the finished gems in an airtight box. on the bottom of the box line with limestone then put a barrier of parchment paper down to keep the sugar clean. the limestone is an excellent desiccate. Restaurants do this with sugar pieces they are using on plated desserts.

I watched a show (thinking it was Cupcake Wars. It's the one where each group makes cupcakes for some big event and the winner gets their cupcakes showcased at the event. They even design the display the cupcakes sit on) There was a lady who made isomalt decorations and the judge was mad and asked her "are you trying to kill us? You can't eat isolator!" Because of that show I thought you could not eat it. So THANK you ! Will be using it on cakes more!!
Just made some & found the isomalt goes hard really quick so you have to work quickly with it. I would suggest if you make gems only do a small batch at a time. Also found I had to keep reheating in the microwave

Hi Elizabeth, I tried to do this with the piping bag. However as I poured the isomalt into the piping bag the isomalt had already cooled that the tip just hardened and it was a mess. Can you comment on what I may have done wrong? Alternatively can you provide the temperature at which you poured the isomalt?
Hi, can I ask: why bother with the sugar thermometer? If the isomalt is ready as soon as it's melted properly, it kinda seems pointless...! Or is there a minimum temperature you have to get it to?

isomalt is for decoration, it's not meant to be eaten in large quantities because it is a sugar free substitute it can cause upset stomach. I would use sugar or melted jolly ranchers for lollipops
I ended up making a test batch of lollipop rounds with the isomalt and they turned out really nice. Thanks for the clarification on it - I'm making the lollipop rounds for cake decoration (sister's bridal shower), so I'll make sure we don't eat them! The only issue I had was that the cooking spray left a greasy look and feel to the lollipops, I'm afraid they will slide off of the cake sides and also the spray makes storing them a nightmare because it greases up the baggie I put the rounds in. Is there an easy way to clean the spray off of the lollipops that you can recommend?

Thanks so much for responding so quickly! Your tip worked perfectly and saved the day as I'd already poured the isomalt into fondant molds and wasn't keen on remaking those! Luckily the syrupy goo dripped out and I could pour the good stuff in and it set just fine. Thank you!
I have tried making these 3 times in the last 2 days ( using the precooked isomalt pieces that you microwave) they are all a sticky mess!!! I made them once before and they didn't do that. I tried placing them in rice, I read to do that when you don't have those desiccant packets. That didn't work...and I doubt the packets work help any. Any ideas why this is happening?

What's the purpose for using parchment triangles instead of decorator bags? Is the heat just too much for traditional bags? I have some really good quality Wilton ones (not disposables) which give me better control, and I'd much prefer to work with that than a self-made bag from parchment, unless doing so would create problems.
Why I have trouble getting the syrup from pot to mold?!!! It's too hot and it melts piping bag or it's to thick and I can't pipe. If it melts plastic, wouldn't it melt the paper?

While the thermometer is in, you could use it to gently move the thicker isomalt out to the thinner, outer part, yes?

if i wanted to make little dots do i still have to use a mold or can i just pipe little dots onto a silicone mat?

Someone suggested spraying the mold with vegetable oil. Did you do this? Do you recommend this? Is it really necessary?
