Materials:
Isomalt (astore.amazon.c...
)
non-stick pot
parchment paper
oven mits to protect your hands
scissors
candy making mold (buy from amazon or local cake store)
latex gloves to handle finished gems so you don't get fingerprints
Isomalt is a sugar substitute that sugar artist have used for years in place of granulated sugar because it is less prone to yellowing, clouding and crystallization. You can make gems out of sugar but it is more advanced. Isomalt is a good way to start out making sugar gems. You can google "isomalt" and find places to buy them. Amazon.com is a good place to buy a bag. It isnt that expensive.
Isomalt IS edible but like I said, it is a sugar substitute and it is made from the same stuff that sugar free candy is made from so it can upset your digestive system if you eat a LOT. It is not meant to be eaten in large quantities, but more for small decorations and eaten in small amounts.

Liz, Thank you so much for this tutorial. Most others always say to add water, but I like the fact that you don't have to. I'm a rather impatient person when it comes to waiting for something to come to a certain temp. I'm so glad you put the warning about isomalt in the details. I've had friends in baking classes get pretty upset stomachs from nibbling on it too much.

I watched a show (thinking it was Cupcake Wars. It's the one where each group makes cupcakes for some big event and the winner gets their cupcakes showcased at the event. They even design the display the cupcakes sit on) There was a lady who made isomalt decorations and the judge was mad and asked her "are you trying to kill us? You can't eat isolator!" Because of that show I thought you could not eat it. So THANK you ! Will be using it on cakes more!!
on the parchment paper i follow your instructions and on the top i used a black office paper clip and it worked and hold it tight, i gave this a try for a princess party and it was a hit thank you for your video it was so easy to follow

Thanks so much for responding so quickly! Your tip worked perfectly and saved the day as I'd already poured the isomalt into fondant molds and wasn't keen on remaking those! Luckily the syrupy goo dripped out and I could pour the good stuff in and it set just fine. Thank you!

Brandon Zech I got my mold at Hobby Lobby. I think they're the same ones she had. I believe it was in the chocolate section...
Loved watching this.I just watched a video on using sugar to do this. These are so much clearer than with the sugar. She used gels to color her sugar. I would think that you can add this as it is being melted using liquids since you don't stir it. I can't see why you couldn't stir if you had a special utensil that was only used for this. Thank you for making this.
Great tutorial! Even if it is for intermediate bakers and decorators it is pretty easy to follow
A tip for the guys who are experiencing sweating or sticky sugar.
Place your units, masterpieces or whatever in a container (doesn't have to be airtight/sealable) with a rack on the bottom, and spread underneath the rack moist absorbing agents that are food safe. Works pretty damn cool in the place where I work and we have a lotta moist here in amsterdam.
My friend tried it an she's never used isomalt before and they turned out really good :P
Sugar, I love sugar. I find it a very challenging medium to work in -- very hot, prone to harden, requires a degree in chemistry. :-)

******Rice would draw out the moisture, as would the desiccant packets. I read that on many website discussing isomalt.... Put in rice or with the packets in a sealed container.

5:29 - 'dirt'? I'd be freaking about any water vapour in the lid when it's lifted.
While the thermometer is in, you could use it to gently move the thicker isomalt out to the thinner, outer part, yes?

I just wanted to know,
*at what point do I add color? I need to make It light pink.
*how long does it take to cool? I only have a mold with 3 gems.
*if it cools, can I microwave it to get it soft again or boil it again?
if you need to add color, use a candy thermometer. Add the color at 280. Just a TINY bit goes a long way. Cook until it reaches 325. Pour at 300 degrees into your molds. Takes maybe 10 minutes to cool fully. Spray a little pam in your molds and wipe out the excess so they don't stick. Yes you can re-melt in the microwave.

Great video. Not sure how basic cooks/bakers can't do this also. It seems pretty basic to me.
just depends on if you have the experience using isomalt or not. Some people dont even know what isomalt is.
Isomalt is a sugar substitute mostly eaten by people with diabetes and people with terrible taste buds because it tastes like crap.
Working with Isomalt is also easier than sugar.
Isomalt burns are horrible.

Hi! I would like to ask you: I've tried this technique, and it's great, but my isomatl (after drying) get sticky on the top of it! :( What could i do wrong? i don't have a thermometer, i just waited to melt, was it wrong? I hope you can help me! (and sorry for my english :D)
Csipke Mézes it's normal...store the finished gems in an airtight box. on the bottom of the box line with limestone then put a barrier of parchment paper down to keep the sugar clean. the limestone is an excellent desiccate. Restaurants do this with sugar pieces they are using on plated desserts.

Thanks that was neat. Have you ever used a metal candy funnel with a dowel rod plunger (dowel with a ball to cover the whole on the funnel) ? I think it would be safer. Great informative video. Thanks again.

you can always pop a few staples into the top of the bag to hold it shut

how do you get it to stick to cake with fondant, without using icing which could show through the jewels?
Hey Liz! Do you ever have issue with the gem being cloudy on the surface after coming out of that mold? I use the clear cake play nibs isomalt. The surface in the mold comes out cloudy while the back remains shiny and clear. Thanks for any tips!
+Janelle F are you using a silicone mold? sometimes poor quality silicone can make the surface cloudy. Or the mold could be dirty or wet and cause condensation and cloudiness or your isomalt could be too hot

They're pretty when done... that one on the floor, though... no five second rule!
Just made some & found the isomalt goes hard really quick so you have to work quickly with it. I would suggest if you make gems only do a small batch at a time. Also found I had to keep reheating in the microwave

Why would this be considered intermediate? You poured granules into a pan and heated until they became liquid. This seems extremely basic to me.

I am making isomalt suckers but the mouth feel is gritty... is there any way to get rid of that with still keeping it crystal clear?
I know this is dumb, but what if I wanted to make like blue or pink gems, could i use food dye straight into the isomalt when its melting?
I have tried making these 3 times in the last 2 days ( using the precooked isomalt pieces that you microwave) they are all a sticky mess!!! I made them once before and they didn't do that. I tried placing them in rice, I read to do that when you don't have those desiccant packets. That didn't work...and I doubt the packets work help any. Any ideas why this is happening?

On your blog you talk about painting the back with luster for extra shine. Could you just dust the luster dust over the molds before filling them? Or would the hot isomalt just absorb the luster making it cloudy?
