Hey Jack, I made this today for dinner and put the leftovers in the freezer for work lunches next year. Was very tasty! I used my homemade jalepino hot sauce mixed with mayonnaise for the serving sauce.

what would be a good alternative to the pico for a very picky non vegetable eater? im fine but my brother most vegetables due to either taste, or texture. potatoes are one of the very few exceptions, that and canned greenbeans not frozen cause canned are soft from the juices. and even then its usually cooked in butter
Looks good Jack! I'm always hesitant to meal prep chicken, as I always seem to experience 'warmed over flavour' when reheating. Essentially, the reheated chicken tastes/smells like wet dog... Not ideal 🤣I wonder if you have any advice or words of wisdom on how to avoid this? I know there's a Serious Eats article on the subject, but not really any practical tips on how to avoid this. Would love some insight in a video if you had any. Keep up the good work, and nice job on the cookbook, it's a really great resource!

The simple answer is don’t overcook the chicken when you make it. I know it sounds obvious but that is the only answer. You can add a splash of water or stock too

chipping in my 2 cents...obviously, as Jack said to start. Don't overcook, and have a decent moisture content. But the main thing is to use the power settings on the microwave, and experiment a little to get the best results. If you change the power to 50%, as an example, the microwave power will cycle on and off, which will reheat more gently and evenly. If you have a serving size with a moisture content that is fairly consistent, you can even nail down the reheat time to a constant known amount, and even in a different microwave, with a different wattage, its so similar, that it's fine.
If I can add to Chef's reply.... Use the power level button on your microwave, and lower to about 50-60% of its full power. Then add a bit more time to ensure it's hot enough and safe to eat. Running at 100% power also adds to the rubbery texture during reheating

Grabbing cherry tomatoes for the pico de gallo would probably have a flavor benefit for those of us in the northern hemisphere. Whole tomatoes are pretty flavorless and horrid around this time of year, while the smaller tomatoes like cherry still carry the full tomato flavor. Just halve them.
