Potato whole wheat focaccia
Pan size 27x19x height 6cm
Whole wheat flour 300g
Bread flour 150g
Salt 5g (1 tsp)
Lukewarm water 345ml
Instant dry yeast 5g (1 tsp)
Honey 1/2 Tbsp (about 15g)
Potatoes 180g (excluding skin)
Olive oil 20g
Please prepare ✔️
Mash boiled potatoes.
All ingredients are prepared at room temperature.
1. Mix whole wheat, bread flour and salt in a clean bowl. Put the yeast and honey in the amount of water and mix. Add it to the dry ingredients. Finally, add mashed potatoes and olive oil. Cover the top and wait 30 minutes at room temperature.
2. After 30 minutes, lift the 4 side of the dough and fold it. And wait 30 minutes. Repeat this process once more.
3. Let dough rest in the refrigerator at least 8-12 hours.
4. 2-3 hours before baking, take out the dough from the refrigerator and put the dough in the pan. Let dough rise at room temperature at least it doubled in size. (About 2-3 hours)
5. Before baking, sprinkle olive oil on the dough surface and make a deep hole with your fingers. Bake it for about 18-25 minutes in the oven preheated 220 degrees until nicely golden.
