I do that and another way where I add in the middle ground beef, onions, minced garlic and shredded cheese.
I do a taco version, a chicken bacon ranch version, and a chicken broccoli alfredo version. They are yummy and the kids love them.

I used a similar recipe that use a roll of cinnamon rolls (cut in half) for the top and bottom. Turned out very good!

I usually add the sugar and cinnamon to my butter and stir it all together and make like a cinnamon butter syrup and pour it all on top, works great😊
