- Ragù alla bolognese is a classic of Italian cuisine - a meaty sauce loved by kids and adults (and great on pasta, lasagne, cannelloni). It's not too hard to make, but requires the right ingredients and a long cooking time. In this video, Marco shows you the traditional recipe his mamma and nonna taught him :) Enjoy!

Ciao Marco! I made your ragu last week for the first time (with the cloves). Honestly, I have never eaten something like that ever before. The flavours are so rich and intense, never jars with ready made pasta sauce for me ever again. Grazie!

Marco, I tried this a couple of days ago--delicious!!!! I was taught to make Ragu Bolognese by a friend of mine from Frabazza, and she insisted on the following things to make an 'authentic' Ragu Bolognese: add 200 gr. minced pancetta, and no more than 2 minced chicken livers, use tins of San Marzano (or Principe Borhese) tomatoes, add WHITE wine to the soffrito and meats until it boils away, THEN add light cream. Cook for hours until it holds it holds its shape in a spoon. Serve over tagliatelle or potato gnocchi! (p.s. I used to be a chef in Paris when I was younger).
I forgot: once you add the cream, cook it on the lowest of low flames on the hob (I used to add one of the other 4 trivets under the pot to keep it raised higher abbve the flame. The ragu shouldn't do more than putter occasionally). Don't salt until the final stage.

you CAN'T add chicken into an italian sauce. And tins of tomatoes are not so good for sauces or sughi.
I agree. if you're referring to my ragu Bolognese (above) that I mention on your Sugo page, I meant chicken LIVERS (JUST 1 OR 2). I use San Marzano tomatoes (from Italy, of course), because fresh tomatoes in Northern Europe are so often pale like fibreglass, and watery. No mozzarella? or Ricotta in your Lasagne? Not a criticism, just mentioning how my friend from Fabrazza made it.
fredrik Liljeblad fredrik Liljeblad even if they are livers... you shouldn't use chicken meat: chicken is always used to make second dishes in italy. and you have to use tomato sauce (passata), not whole tomatoes, because even if you add salt or oil, you will feel the "bittersweet" taste of tomatoes. there's a long preparation for tomato passata, but I can't explain how to make it
That is the best. I added a little thyme in my experimentation, but I loved the addition of the cloves. Grazie tanto.

Lovely video and you're a wonderful presenter! Meat sauce with cloves but also with cinnamon is a traditional ingredient for Greek moussaka. I noticed there was no mention of spaghetti for the bolognese sauce - 'traditional' in the U.K., but not in Italy!!!

just made spaghettini alla ragu by this recipe (I added some garlic and didn't include cloves) and it is no doubt the best bolognese I have had outside of restaurants in Italy (not Italian restaurants, restaurants in Rome or Sorrento which are the places I have been to in italy)
Like the cloves idea. In Veneto its common to use 50/50 pork and veal with dry white vine. If you have fresh tomato sauce to add........amazing.

a little suggestion of all the not italian peolpe, the sauce has to PIPPARE! It means that it has to "boil" for a lot, at least 2 hours 😋

My family recipe for Ragu alla Bolognese also includes minced celery, and both minced chicken livers and gizzards. No tomato sauce, but a small amount of tomato paste instead. At the end, we add both some milk and nutmeg.
La mia ricetta di famiglia per il ragù alla bolognese comprende anche sedano tritato e sia i fegatini di pollo macinati che i gizards. Nessuna passata di pomodoro, ma una piccola quantità di concentrato di pomodoro. Alla fine, aggiungiamo sia il latte che la noce moscata.
Vai bolognesi, commentate tutto quello che ho sbagliato in 3...2...1...via! 😂

Mi ha aiutato tantissimo frequentare un paio d'anni di università negli Stati Uniti (e poi continuare a vivere e lavorare all'estero). Poi devo dire che essere in una relazione con un anglofono ovviamente significa che parlo inglese per la maggior parte del tempo (e soprattutto ho sempre un dizionario umano da cui imparare ;-)) Non ti arrendere

No gli struffoli non li ho mai sentiti ma immagino siano buonissimi. Cosa sono?
Gli struffoli sono dei tipici dolci natalizi della cucina napoletana.
Il dolce è composto da numerosissime palline di pasta (realizzata con farina, uova, strutto, zucchero, un pizzico di sale e liquore all'anice) di non più di 1 cm di diametro, fritte nell'olio o nello strutto e (dopo averle lasciate a raffreddare) avvolte in miele caldo e disposte in un piatto da portata dando loro, in genere, una forma a ciambella; si decora, infine, la composizione con pezzetti di cedro e altra frutta candita, pezzetti di zucchero e confettini colorati (chiamati diavolilli, diavoletti oppure "minulicchi"). Una variante può identificarsi negli struffoli al forno, e cioè con le palline di pasta cotte al forno anziché fritte, più leggere e altrettanto gustose.
Comunque io sono nato ad Avellino in Campania, ma mi sono trasferito a Roma da quando avevo 3 anni, quindi si può dire che sono Romano 😅

I'm so sorry for my english... but I'll try to explain to you how make "Caffè"
The secret is the procedures.
Espresso means a coffee that is so strong, it means that the coffe is justca bit... but it's much strong!
However, you need to be a "Moka" or in Italian "Caffettiera" and insert the "Caffè espresso" or coffee powder insede the Moka, add water in the bott of moka and place it on fire. Wait untile coffe came out 😊

I am currently living in Germany and here there is a lot of variety like instant coffee , whole coffee beans , ground coffee beans and capsules also. But none of it sadly tastes like the velvety creamy expresso in Italy!
So I thought may be its a particular type of coffee or brand of coffee or machine that makes the coffee in Italy so divine :)
I forgot one simple rule: never ever wash Moka with soap!

previosly you said that it's alway le lasagne not la lasagna and now you said lasagna alla bolognese. also when I was in Roma and Sorrento I had a hard time finding lasagne and I found more cannelloni.

I would never put carrots or Sellerie in my Ragu+
tomatoes are acid and you need something sweet to balance that (talking about chemistry not flavours!); at the end you will not feel the carrots (and sellerie) at all. Anyway if you really don't like the idea of using them you can add a spoon of sugar to the sauce.
