    I am from Bologna, we invented Bolognese sauce, which just call it ragu in Bologna. Gennaro is right, this is a modern way to make ragu, and very delicious. My grandma used to make it old style, only beef and pancetta, and always tagliatelle, never ever ever ever spaghetti. I moved from Italy 20 years ago, so now I am used eating bolognese sauce in every possible way, I have even tried with rabbit meat, also nice. It's like pizza now, too many variations, and many of them are very good and delicious. Just enjoy the fucking food.

    It cracks me up when people try to tell Gennaro he's wrong. This man has been cooking since before 90% or more of you guys were born. I'm going to take his word over yours any day.

      He is wrong. Ragù alla bolognese isn't a new fancy dish, it's a traditional dish. He's cooking for 10 or 100 years, but he did everything wrong in this dish.

    I've tried many many many bolognese recipes including Gordon Ramsay's and Jamie Oliver's, but this one is the best so far. And it tastes just as good with dried bay leaves and rosmary than with the fresh ones. So, Bravo, Gennaro!

First of all I don't think my regional recipe is the best and the other Italian ones are garbage, second you ignore there is only ONE Bolognese ragù and hundreds of meat ragù. The one called Bolognese ragù DOES have a certain recipe, and the one in the video is NOT correct. Do a reasearch. Your answer is nonsense. Living next the Italian border doesn't make you a big expert of Italians.

    My husband is a huge Italian pasta fan I discovered this recipe and sent it to him. Of course, we made this Bolognese immediately. This is one of the BEST Bolognese recipes we have found. It is now part of our regular dishes. I keep everything in the house stocked at all times. If you haven't yet tried this beautiful recipe do so immediately, you won't be sorry.       @StavroGavro because he's anerican, for him every pasta is the same and he sees no reason to use one over the other. You don't use tagliatelle nor spaghetti, with ragu cause it would just plop away from them... You need an equal amount of ragu on the fork with the pasta or you'll just eat boiled pasta with a slight meat flavour...

      I only ever watched Italian chefs when talking about Italian food. They either cook the pancetta first so it browns and then chuck the carrots, celery and onions in or vice versa

    Hey Gennaro...I decided to do soffrito with my onion and carrots and celery, then add it to the browned meat - and I'm glad I did because the veg was only just about done! Beautiful dish, and it won my wife over despite the fact she couldn't believe you could have ragu without garlic and basil! Good man, bol will never be the same again!

    I learn to cook similar to this but with the chuck steak and veal and cook for few hours and it falls apart with tenderness.. keep adding the stock little bit at a time. It takes a long time but it is worth it.

      +PΔNTΔ If you do it without a vegetable stock (which you should get in every supermarket on our planet) do a soffritto instead of just putting the vegetables besides the meat. This will give you a bit more aroma and texture to the sauce. If you have, a small anchovy powers it up a lot.

    this is the best bolognese recipe > get a pan and put in a generous amount of olive oil, then put in 2 minced shallots, 2 pieces of minced garlic and very finely shredded carrots (half of a big one will do). While cooking that get a big pan, pour a little bit of olive oil in it and then 500 gr of mixed minced meat (so 250gr of pork and 250gr of beef). Then put 3 to 4 table spoons of tomato puré in the pan with the carrot/shallot/garlic mixture, stir that through and cook it for a couple minutes. Then add it to the pan with the minced meat. Stir that in very well. Then pour in a can of peeled tomatos and a pack of diced tomatos and squash them with a spatula till everything is kinda mushed up. Then put in some salt, black pepper a little bit of oregano and some sambal (chilipaste). Then cook for about 2 hours on very low with the lid on. Trust me, this is a recipe from my grandfather from Napoli, it is the best bolognese recipe i ever tried out. try it

      I don't know in what shithole of a place you live , but where I'm from, kids don't have problem eating celery and carrots , especially in a Bolognese dish ! Jesus what the fuck is wrong with you spoiled first world brats!

      After an hour of simmering diced or grated they still desintegrate into the sauce. I never liked the taste of raw celery it’s got that strong cilantro after taste but when cooked is fine

    i love bolognese , and i cook it a lottttttttttt of times . here are my secrets in my opinion to make it great. try it you will see :)
    - SEAR THE MEAT PROPERLY , thats means you can start cooking the meat first , or do it in an other pan. MAXIMUM fire power , and wait for the pan to be f hot. you need to have a crust around it , if its too low fire you will boil the meat and it will be tasteless.
    - USE A LOT OF OLIVE OIL , at the beginning for your meat and put more later on if you think you dont have enough. why ? because the oil will me the main part of your sauce at the end. Let me explain. After you add all the ingredients and your stock , you need to let it recude for a long time... the longest the better it will be .( 45 min is a minimum for me with low fire )
    Many bolognese i eat in restaurant arent good because they are too " wet " . You need to reduce it so much that you will have only oil remaining and no more water. The oil you will get gonna have "orange/gold " color , all the taste of meat , oignons , garlic tomato paste etc inside it. If the bolognese is too watery , it's gonna taste like shit . LET IT REDUCE at the maximum , no more water inside. only OIL and all other ingredients. Until you dont see the oil shining through , thats means you still have too much water . THATS THE FUCKING KEY .

    I thought the "real" bolognese ragu should be cooked for couple of hours, usually from 3-5 hours. Well, i guess, the ragu recipe is different in each village of Bologna :D

      I guess Gennaro does it to order at his restaurant. I'm cooking mine for about three hours (after the first three processes; cook the sofrito for 20 min, brown the meat for 45 min, add tomato paste and cook until rusty, another 20 minutes. I then deglaze with red wine, add some stock and water, bring the heat down to very low then let cook (stirring every 5 or ten minutes) for three hours. The whole process takes a little over five hours.

      It is a bit arduous but well worth it. I might try one of the lazy versions (quick saute of sofrito, not caramelizing the meat or tomato paste, etc.) but I think there will be a huge difference in the flavor. The long process (not the simmering for hours but the process I wrote out) is where all of the complex flavor profiles comes from.

      because he uses tomato concentrated paste and hads meat ragout (i think it's that... no sure) to make the sauce. if you want to make the tomato sauce with actual tomatoes, it will take longer.

I admit I've never tried this, on the other hand did quite a lot of various "fast" versions with repeatedly good results and might be that it tasted quite well also when stored for some time. Do you mean keeping it under boiling point but warm for such time or so? Otherwise it sounds really strange...

      This is not a true, in italy "bolognese" don't exist. The real name is " ragù alla bolognese" and the fondamental ingredient is milk on the tomato
