Why didn't you coat the skin in a layer of salt? And then flip skin-down to finish after having knocked off the salt crust?
Maybe not enough fat, but crispy skin is needed.
Would still enjoy, but chicharrons are a huge part of a fired pig roast down south.

You know that scene in National Lampoon's Vacation (the real one with Chevy Chase and Wally World) where they're at cousin Eddie's house talking money and Eddie says "Well I didn't want to ask you Clark, you know, but could you maybe spare a little extra cash?" and Chevy Chase says "sure, Eddie" all cocky and pulls his wallet out and asks, "how much do you need?" and Eddie says, "about 52 thousand dollars", and Chevy Chase just calmly slips the 20's back into his wallet. I just lived that scene when I looked up how much that chef's knife costs hahaha. I'll let you look it up yourself so you can have the same experience hahaha. You're welcome.

My dad has cooked deer in every way possible, and he's been looking for new recipes to share with the family.
