You missed a step. Should have taken a sample of your mix, fry it up on the wood stove and tested before putting in the stuffer. So you could correct the seasoning if needed. I know you are working with a dialed in recipe, but for most folks giving this a try. Love your "How To" videos! Thanks for sharing!

Get some clamps for that sausage stuffer so you aren’t fighting. Also learning to link the casings as you stuff saves so much time
I always use a new paint mixer in my cordless drill to mix in the spices. Works great when doing larger batches

Personally i like to butterfly the thick ones. Get a bit of crunch on one side. Add sauce to flavour. 🤤

On each grind at the end of the grind grab a handful of ground meat and run it through the grinder again. That way the meat that's in the grinder head get's ground also. If you do this you will be able to use all your meat.
