For foreigners, it's helpful to understand the choices on the ordering sheet. Most are self explanatory, but the first two often confuse:
Dashi is the soup base. You can think of this as making chicken soup with a bullion cube, Requesting light or strong would adjust the amount of bullion to change the strength.
Second, the Richness is the amount of animal fat. Again, think of making chicken soup, but this time with a whole chicken. There will naturally be some rendered chicken fat when you are done boiling the chicken. When you are done making your soup, there will be SOME chicken fat left in the soup (good flavor!), though many will siphon off some of the fat during preparation. The richness is choosing the amount to keep in the soup. In this video, the tonkotsu is normally made with pork bones, so they would adjust the amount of pork fat in the soup for your order.
I hope this helps some when they get a chance to order is such way at a noodle shop. 🙂

I went to the New York location of ichiran ramen in 2018. It looks very similar to the one in Japan but we did not order through a vending machine. Best tonkotsu I have had so far. I also visited ippudo ramen in New York and it was very good too.
Thanks for sharing Ichiran counter seat is same as Japan! What a nice! But no vending machine, that's also surprising! We have plenty of good Tonkotau ramen in Japan. If it's possible, come to Japan and enjoy ramen in Japan😆

Yeah I guess it's something close that! Because noodles are pretty thin so they are easy to be boiled, cooked!!
