My grandmother didn’t use a recipe except the one in her head…most recipes cook the rice first in water or worst, uses leftover cooked rice…I have found with all of my trying different recipes, one needs to cook the rice in milk basically to make a richer consistency, in my opinion. She always had fresh rich full milk because she also had cows!😜 Sweetened condensed milk is delicious but much, much too sweet and, of course, my grandmother never even knew there was such an thing! I really just needed this recipe for milk/sugar/time ratio in order to replicate my grandma’s!🥰🥰 You did it! 👍
I have never seen it made on the stove. My grandmother who would be 118 years old now made it in her wood oven. She used milk, already cooked rice, sugar, salt, vanilla, 3 eggs, butter melted and nutmeg and raisins to make hers. Baked in oven in a water bath.
My mother who is 96 now used to make it this way too. I remember as a child watching her carefully slip a fork under the skin and swirl the custard to make sure the rice was well spread throughout the custard, without disturbing the skin. I’m not a fan of the skin, but those that love it get a lovely serve.
My Grandma passed when I was very young, I'm now 66. I made this recently, and it made me cry. You brought back memories of her I have not had in years. Wonderful rice pudding. Grandma was from Germany, don't know where your Grandma was from, But, my taste buds say they're the same... Thank You...
This is exactly how "my Grandma" made it as well. It was so delish I used to ask her to make it weekly. The only other ingredient she added was a pinch of nutmeg along with the cinnamon. Those thrilling days of long ago are gone but the memories and "taste buds" are never forgotten.

Did halve the sugar and vanilla this 2nd time around and prefer it. Recommend adding the cinnamon stick during the cooking as it gives such a lovely flavour. Also added raisins as my hubby pleaded me to add them as this is the way he likes it.

This is basically rice soaked in sweetened condensed milk, which is what you get if you boil milk and sugar together until you get a thick mixture. You could save a lot of time by cooking the rice as usual in plain water with a little bit of salt. Then, when it's more or less cooked (~20 minutes for 1 cup of rice), turn off the heat, add the milk, sugar, and vanilla extract. Stir everything until the bottom of your pot is clean. Then turn the heat on to medium. Stir and keep stirring until you get the consistency you want. This method only takes 30-35 minutes tops, uses less milk (less than 3 cups of milk for 1 cup of rice), and prevents you from burning anything.
Looks like a real good recipe. My mom was always trying rice pudding recipes and didn't find the right one for a very long time. Finally she found one that she loved and let us kids try and we thought it was the best also. Now she's gone and don't know what happened to that recipe. I put a smidge of freshly ground cardamom and a slight grating of fresh nutmeg (Grenadian nutmeg) into mine, but outside of that I make my own just like this... think I'm gonna try with fresh coconut milk next time around - as the fat content is a bit more stabilizing - and I can make my own from the dried coconuts available to me..
That’s my mom’s recipe except no cinnamon. She added raisins. She also never used eggs. She said she wasn’t making custard rice pudding and besides, the rice would thicken it all on it’s own. By the way, great job!🙌🏽

@@rochybenlu Make this rice pudding as is (without the cinnamon) and then look up a recipe for homemade custard (which is NOT the same as vanilla pudding, as you know, but others might not). Try the recipes out, and compare it to your taste memory. With a bit of trial and error, I'll bet you'll have a successful copy of your mom's recipe very soon. So sorry for your loss. My mom is gone, too. It's not a fun club to belong to, but making their dishes is a comfort, albeit bittersweet.

Some add coconut or coconut milk. Some add nuts. Cherries. Raisins. Chocolate. It seems to be an extremely versatile dish, that can be adjusted to suit anyone's personal taste. And such simple ingredients. It's perfect.

It seems that rice is such a simple flavor that almost anything can be added, according to your personal taste. Raisins, cherries, nuts, chocolate, lime, cranberries, etc. Whatever you like best. Like vanilla ice cream -- you can put anything on it.
I agree that pudding is good either cold or hot, but flavors seem to meld in the fridge overnight for many dishes. The only solution is to make two batches. One to eat immediately, and one to eat the next day, with improved flavor.
Hints: Put the vanilla extract (1 tsp per 1 quart of milk) into the rice pudding after it has cooked and cooled down a bit. Also, stir is frequently (every 15 minutes) and cook it for 1 hour on a simmer or a low simmer as you say.

I just made this : 2 Recommendations - 1) Simmer the Rice for 40-45 min. , not 30 , rice still had hard bits after 30 min. simmer and 20 min. with stove off . 2) Sprinkle lightly part of Cinnamon in at a time and stir , too much at once , and it will have clumps of cinnamon . Sprinkle some , stir...sprinkle some ,stir .
rightmarker1 That's because you need true cinnamon. Saigon cinnamon isn't it. You need the cinnamon from Srilanka which has a sweeter more melow flavor. The fake cinnamon has a very strong harsh flavor.

I add 1 egg and raisins, cinnamon and cup or two of milk to cooked rice and bake in oven until firm like a custard or bread pudding.
So simple. Will try it for sure!!

I usually add Saffron from trader joe and rose water instead of vanilla/ cinnamon !! Then I garnish the pudding bowl with crushed pistachios ....

Raisins or dried, chopped dates both work well in rice pudding recipes.
I'm not the biggest fan of raisins, so dried cherries are also really good
