    I know this is an older video, but thank you for keeping it up! My 87 year old mom asked me to can her Apricots and I never have before. This helped a lot. Thank you so much, she is going to be so happy!!

    Thank you SO much for making this video! Last December, we moved into a house that has a mature apricot tree in the backyard and I've been watching the leaves grow and now the fruit, and I'm so excited to be up to my elbows in apricots soon!

      You do?? I just go at slow pace that’s why I keep my jars heated in the oven so I can take my time. I’m generally a pretty mellow person as it is though.

    Thank you, great video. I find getting that first layer of fruit (usually peaches) really fiddly, it is a lot harder than it looks LOL I even add a drop of syrup first to make sure that the cavity is filled, but they still jump around as I build the layers. I am going to try this recipe with apricots next, but I wondered how the skins turn out when they are canned. Are the apricot skins soft? I never see instructions to peel apricots, yet they recommend peeling peaches. Thank you.

    When you are sterilizing the jars in the oven, are you talking about degrees Celsius or Fahrenheit? (I am in new Zealand)

    how long do you boil the lids/rings? does that degrade the rubber seal on lids?

      About two minutes no it doesn’t it actually helps them to seal better.

    Question did you weigh your cots before pitted or after you removed the pits? 2 lbs per qt.

    My grand mom made me apricot jam up until she passed away. This was great! Are you from CA originally? I love these canning vids. I have a lot to learn and you’re so good at it!

    Using a wide mouth jar is much easier to pack the jars as well as removing the apricots when you want to use them.

    A friend told me I could make apricot jelly from the juice mine was really apricotie tasting so I should make a nice jelly correct???

    We just canned apricots using a USDA procedure and they had us put the apricots in a mild lemon water solution to preserve their color, but I think it broke down their texture. You don’t use lemon juice or Fruit Fresh?

    I know my apricots are ripe but they sticking horribly to the seed not as easy to pull a part as you did why are mine different from yours mine are reddish yellow apricots does it make a difference cause even the over ripe still wouldn’t separate from the seed I had to use a knife to pry them off some butcher as I tried.

      It could be the variety. Try google freestone apricot varieties.

    California apricots that I’ve ever gotten were never as good as the ones that grow in my backyard in Paducah.

      You have to get them straight from the farm store bought are no good!

      They pick them before they are ripe so that they will make it to the shelf. Also some of the larger varieties much less sweet/flavorful. Backyard tree ripened fresh apricots will usually be better.

      Well usually 1-2 years but my grandmother stored hers for many many years.
