- Having always canned our apricots using raw pack, we decided to use hot pack for this batch to try something new. Results were not what we expected.

When my apricots get too soft I blend them into nectar. It's delicious and makes a great breakfast smoothie with plain yogurt.
My parents had a Blenheim apricot tree on our property in the 1950’s here in So Cal along with orange and plum trees. Mom always hot packed especially for use as baby food (she had 11 children). We older kids loved it on pancakes and ice cream.
I did apricots earlier this year when they were in season in our South Africa summer. I followed the USDA suggestion for hotpack and was SO disappointed. It turned to mush as well. Well, so we learn. This week was pinapples, and since a few jats failed to seal properly due to substandard lids, I made them into Frozen pineapple. Always make the best from your situation. Observe, analyze, and ajust.🎉
I am really enjoying this series. Start to finish. You both do such a great job to give or link to as much information as possible and I greatly appreciate that. Recipes are wonderful but I am the need to know all the things kind of person.

I agree with the raw pack. I would use them to make jam one batch at a time in the winter. They will do fine for that. I've canned since I was 12-13, now in my 70s. I slip peels like peaches and water bath with raw packing. The fruit is still good for the jam though!

I know they were not what you had hoped for, but I feel the same as you, I’d be just so tickled just to have apricots sitting on the shelf! You should go back get another box and make jelly/jam!!!

You would have gotten a better result if you had submerged the apricots in the boiling water for a few seconds instead of bringing them up to a boil. It appears to have overcooked the apricots. 25 minutes on that little burner may have been too much.
yes, the directions state to dip apricots in boiling water for 30-60 seconds. Can always use them in yogurt, ice cream or jam.
@@grantleon6736 It says if you want to peel the skins then dip them. Next step is to bring them up to a boil. Then can them.

Apricot sauce is delicious in chicken dishes, Asian, ice cream and Angle Food cake.

Last fall when i wanted to can pear halves i used a current Ball recipe for pears. The instructions were to heat the pear halves in a single layer in water until they were hot and then add boiling juice to the jars before processing. They also said raw pack results in a lower quality product so i went along with it. The fruit turned out beautifully but boy was it ever hard to get them cavity side down in those jars!

Oh gosh, I’ve never hot packed fruit for this very reason. They’ll blend up nicely to make ice cream!
Great idea, I may just follow your advice with my apricot catastrophe.
You can make apricot nectar to drink or put in smoothies as well. I can it myself, as I have a tree and always have an over abundance of apricots.
It sounds delicious as ice cream. A local you pick place always has homemade strawberry or peach ice cream when the fruits are ready. It is expensive, but oh, so delicious! Especially in this Texas heat & humidity. I bought a small ice cream maker. I think it makes a pint. I haven't used it yet. But I have strawberries and peaches in the freezer.:)
Pam: I wasn't sure I wanted to use the hot pack method for canning apricots. But now I am sure I don't want to use that method in the future. When I saw how soft it make those apricots, I would probably have switched plans and turned them into jam. Either way I am sure they will be delicious. Thanks for the info, this video was very valuable to me.

I've always raw packed apricots because they get so mushy even just during processing, but i bet they will still taste good stirred into yogurt or cottage cheese ❤
I freeze dried my apricots and it's divine.
They really are good freeze dried.

my most cherished memory from mychildhood is waking up christmas morning opening pressies having brekkie then helping mum make the apricot jam that we had picked the fruit from in our back yard the day before. then after we finished all piling ih to the car for the hour drive to my grandparents with a freshly made jar of jam for nana as our christmas pressie to her from us children.

There are so many fun things you can do with these sad mushy apricots. Just blend them and use to make ice cream or put on top of waffles. Use in smoothies and in baked oatmeal. Yum! I think I bought apricots at Freis on the same day as you

It is so disappointing to have this happen. I have started raw packing all my fruits and some vegetables. I had this mushy issue happen to me with hot pack pears and apples, I just mashed them up the rest of the way when I opened the jars and used as a sauce. Thanks for sharing with everyone!

We take our bottled apricots and just blend them with ice. Makes a delicious, easy drink.

I did the same procedure for peaches because I couldn't remember how I did them last year. They were so pretty last year and had good texture. I haven't any of this years peaches but they look very mushy this year.

For once I beat you to it! My husband and I worked together to save our apricots two weeks ago and made apricot jam. I don’t eat much sugar so I used pamonas pectin and it is delicious . I had family ask me to have some , but I didn’t get but five pints ! So I am saving them. I gave them honey since we had plenty of that from last season. Husband does bees. Hope we get plenty of peaches off tree this year, so far they look good. We have four banana trees in our greenhouse that have fruit and about to get ripe. I will be freeze drying some and freezing some. We will have another banana party with friends where I made several banana desserts and banana splits! I love growing ! ❤
Awe, the final product looks absolutely delicious! To learn that you don't like the way hot packing apricots isn't for you is a wonderful discovery.
Your experience with cold packing apricots is far and away the best yardstick on that comparison.
My Aunt Reita put up many apricots over the years when I was a bit more than a tadpole. I don't know what method she used. Nevertheless, they were such a great treat.
How about you make something special with them? As an individual ingredient combined with other banked ingredients, to make a spactacular dish? Thank you for this experiment...❤❤❤❤

So I read when making jam but the ones that aren’t quite as ripe have a lot more pectin. And that it’s OK to add those to the jam because it will help it to set. They also make better hot pack because the fruit is not already going to be soft.
From Pam's perspective, she will go back to cold pack with apricots. Jim

Im interested in seeing the raw pack results. My prediction is that the texture of the apricots will be better, however, the product will shrink down in the jar and the headspace will increase. Thank you for another informative video! 👍🏻👍🏻

I learn so much from your show. Thanks. I do have a question. What if you kept the apricots in another bowl while preparing all of them. Bring the syrup to a boil then put the apricots in for a minute or so.
Pam, I’m looking very forward to your cherry canning video as my cherry tree has had a great year and I am drowning in cherries at the moment. As a fellow science teacher and science teacher educator, you know that steam and water do not have the same amount of energy per gram and per degree of temperature at the same pressure. Also, l can make the temperature of the steam in my slightly different model of steam canner higher than 100C, easily (at my altitude, anyway). Because of convection issues, I wonder if the extra energy and slightly higher temperature translates to more sanitization on the inside of the jar, tho. We’ll probably never know.
True, but for canning the results are the same.
For the hot pack perhaps using the less ripe apricots would have being better, regarding to consistency. I also always add some fresh lime juice to the pot when th process is finished, it keeps the fruit with a brighter color.

That may have worked better, but the ones I used were pretty firm.
I think we can all relate to that disappointment when something doesn't turn out. That said, I would probably prefer them mushy because I don't like rubbery apricots😊

I have not canned fruit yet. I really dont eat jelly much. But I would eat canned fruit. I could really see the disappointment on your face. From this video, I learned raw pack is much better. This will help me in my future canning. Thank-you.

I used their recommendation for hot packing peaches last year and had the same result, very disappointed! The peaches were mushy as well. Live and learn! I think, since they were boiling when you put them in the jars, I would probably have shortened the processing time down to 10 minutes. I think they would be fine and keep their seal.

I do have a question? I always taste my apricots fresh and ripe before doing anything with them. How did this variety taste?
They were sweet and excellent in texture. I was pleased.

Reminds me of when I did hot pack sweet potatoes, I was so disappointed! Too mushy. I will use them for pies, casseroles and soup.
Good thing we can use back-up solutions for these kind of experiences!

Sorry, about your disappointment on hot pack apricots. Look forward to the comparison of raw pack vs. hot pack. Please include a demonstration on how to raw pack apricots in that video. I have never raw stem pack anything. I been watching other channels steam can in a regular stock pot vs your fancy steam canning pot. Is there a simple fruit to steam can you could recommend for my first time? Working up nerve to give it ago? I vacuum seal and dehydrated vegetables, herbs, and lots of supplies I buy in bulk to save money. I finally was able to afford a huge stock pot and want to try steaming canning. I enjoy your channel and learning.
We have a video on how to turn a regular stock pot into a steam canner as well. The recipe posted below the video gives a very clear idea about how to do raw pack. We have a video coming up next week on steam canning cherries that may also help.
I hope you find a way to use up the mushy ones quickly. Plenty of ideas in my mind. It would be a waste to keep on the shelf extra long time due to avoidance of use.
They will not go to waste, for sure! We will still eat them.
Does the maslin pan also work well for making ghee?
Yes it does. We use it all the time.
For apricots, I've always done hot pack with good success (Blue ribbon at the Evergreen State Fair). I put the raw fruit into the hot syrup and then bring them to a boil, one layer at a time, similar to how I hot pack peaches. I'm sorry yours did not turn out as expected.
What do you mean by “ one layer at a time”?
@@cynthiafisher9907 I put one layer of raw fruit in the pan of hot syrup at a time so they can float freely and not be stacked on top of each other.

@@cynthiafisher9907 Yes, that is exactly what you would do. I use a wooden spoon to put them in the jars - I like to use narrow mouth pint jars for my apricots.

That’s the most disappointed I’ve ever heard you sound 😢and I’m so sorry for your efforts. I’m sure they will taste a lot better than they look. Although I watch I’m still a canning newbie and have yet to try anything like this. Wondering if you could’ve switched gears and turned it into jam/jelly/fruit spread once you realized the fruit had gotten so soft? I saw where one commenter suggested that bringing the syrup to a boil then adding the fruit, blanching as it were, might’ve been a better approach. Thanks as always for sharing with us! ❤😊
The recipe only says to 'bring to a boil' so it doesn't have to be a rolling or bubbly boil. did you possibly over cook them?
