    I've actually never had this with bamboo shoots before. Gonna give your recipe a try this week. Seems like the veg would provide a nice flavor/texture contrast to the fatty pork.

    My fave braised dishes: Viet: ca kho (though I want to find a replacement for the Asian catfish that's still nice and fatty, maybe salmon?) and thit kho trung.
    Also beouf bourgignon, Hungarian (not American) goulash and paprikash, carnitas, birria, and never tried something with lamb or beef shank, or oxtail that I didn't love. Bit pickier about short ribs, but when they're good they're fantastic.

      Yes sooo good! I actually don't love catfish, and I have a recipe coming up making it with black cod - and it's buttery and flakey texture is absolutely perfect in ca kho!

    Hi! Just curious if I use water instead of coco rico, how much sugar I should use/carmelize?

      Great question, I've tested subbing it out 1 for 1, and the results were still very tasty! If anything, I would add just another 1-2 tablespoons. Coco Rico itself isn't very sweet! Hope this helps
