I used this recipe/video today myself and the method worked beautifully. The skin was super crispy, but the meat was still tender. The only difference is that I used a special skin piercing tool that uses 28 needles to prepare the skin. Thanks for sharing a really helpful video!

Some really great advice regarding blanching, marinating and drying etc. It looks so juicy and crispy. Is it really cooked for only 25 minutes though followed by 5 mins at a high temp? It just seems so quick?! At 200 degrees, I usually find that a piece of pork like this takes about 45 minutes - maybe it cooks quicker because it was blanched? Get looking pork though.

Prepared this tonight and hope I get that crunch tomorrow. Edit-I would double check on the timing for the first roast. 20 minutes was absolutely not enough to get the pork belly as brown and bubbly as you shown in your video with the temperature of 200 degree Celsius. I had to then raise the temperature to 450 degrees F for 40 minutes and then nuke it at broil for the last few minutes. Also, some parts are unevenly crisp. I ended up having one side super crunchy and another not. I then rotated it.
Correct. Every oven is different. It usually takes me one or two times to work out the timing and positioning of different home ovens for when I make roast pork. Once you get the routine down, it's easy. You just have to keep an eye on it the first one or two times.
If you have one side of the skin crisping up and another side not. Take a piece of tin foil and just gently place it over the crispy side and rotate so the other side gets crispy without burning the already ready side.
@@sowhodecidedthat3924 Most ovens have broil now a days. And if not those toaster ovens work as well on toast setting. Another method is heating up oil to smoking point and use a spoon and just keep scooping oil onto the skin.

Yes, no matter what the online recipe, home ovens don't get that hot. Without a broil function, it doesn't really work in the majority of ovens.
