Very familiar type of noodle soup. In Teochew dialect, guay tiow specifically refers to the fresh wide rice noodles. The type you use in pad see ew but narrower and thinner. I will also suggest that tang chye be added to the stock - it enhances the soup base very well and not just as condiment. My personal preference is also using shallot oil and sprinkling over the fried shallots at serving.

Love having the inner pot stainless so I can use my immersion blender right in it without worrying about scratching. It makes potatoes great and fast! Still working on the vegetables, first time came out great, second time I did different ones and they were a little too mushy. Just need to adjust the time. I highly recommend this pot!!!

I tried this at a street vendor in Thailand. It's super delicious and addicting. I must say it taste nothing like Pho soup. It has a unique deep flavour taste, very well seasoning broth.
Hello, Pailin! Thank you for sharing this recipe . I must say it is better to make my own Chicken Stock rather than Using the store-bough one. I tried this recipe a few hours ago and it turned out good. I used Chinese cabbage (cai xin) , bean sprouts and Chicken breast.
