BUILD: heat tortillas add beans add pepper strips add rice add cheese add beans again roll that shit up optional toast burrito in pan to brown sides

I have a feeling those peppers didn’t want to give up their skins so easy cause he did slightly lower heat with the grill lid closed. Any time I’ve seen this done where it worked, it was over an open flame and had to be constantly turned. Could be just stubborn peppers too. What do I know haha

PRO TIP: If you use cumin a lot, get the seeds and toast them in a skillet on the stove just to heat up, do not burn, and then grind them in an old grinder. Sooooo much better, trust me you will thank me later.
Made 6 of these last night....yes SIX 😊 Me and the hubby had 1 each for dinner with some elote. Thennnn a couple beers later we each had another for some midnight munchies 😁 the last 2 are packed for his work lunch. Incredible!!! Just me, but if you're going to use canned pinto beans, try this: Cook a couple of pieces of bacon, remove. Add chopped onion (the amount depends on your can of beans but a couple of tbsps) and a chopped jalapeno. Cook until soft, add a tbsp chili powder, 1 tsp cumin, dry oregano & cayenne, 1/2 tsp coriander and allspice. Stir in a couple tbsps of the juice from the can and deglaze the pan. Add beans, cook for a few minutes, then mash to your desired consistency adding juice as necessary. Add the chopped bacon at the end and incorporate. Makes darn good refried beans.

Another alternative to the peppers used here...green chilli peppers..split in half and use a spoon to remove seeds to reduce the heat..but keeps the flavor

The trick to sweating the skins off the peppers is to use plastic bags, not paper. Paper is permeable, plastic much less so. The hot roasted pepper sweats in the plastic bag and the water vapor loosens the skins. Paper for brisket.
He needs to do more with Mozzarella so the cheese bite stretches out, drops and sticks to his chin. Out of his 1.79m subscribers 1.5m probably do exactly the same thing all the time, and the rest don't cook!
Sam, you have to try "Frijoles Puercos". It's refried beans cooked with lard, chorizo, cheese, a bit of hot sauce and I don't remember what else. They are fucking amazing!
Not sure if it would make that much of a difference; but I always put the poblanos back in the plastic bag that I bought them in to rest/steam/cool after charring (even giving the inside of the bag a couple spritzes of water), and tying it off... and then 15 mins later rub the peppers while inside the bag to remove the charred skin. I would think a paper bag would just absorb a lot of the moisture the peppers are giving off, making the skinning more difficult...

A really simple burrito can be made by using a can of ranch style beans with jalapeños, mash them with a potato masher, heat in micro wave. break a slice of provolone in half and place on a large flour tortilla. Top with diced white onions, cilantro, iceberg lettuce and medium guacamole salsa. Try it, you'll like it.

Simple refried beans are OK but I like to take it a bit further with some bacon grease or mayo for a 'lard' component to make them more creamy and add flavor. Thanks for the rice ideas - I will b sure to try those since I haev yet to make a decent Mexican rice at home.
Poblanos are the fresh green pepper, once they’re dried and change colors they are referred to as a Chile Ancho. Just like a dried Jalapeño is referred to as a Chile Chipotle. A Chile Pasilla is the dried Chilaca pepper. Who knows why they call them that🤷🏽♂️ all I know is they taste great!! Love your videos sam!

If I may give you just a little hint, put your peppers in a plastic bag, as it will steam off the skins instead of absorbing the moisture. :) BTW, love watching you y'all!! Love that you include you family.
So I made this today, but replaced the chicken stock and tomato sauce with bolognese sauce from the pantry and beef stock as liquid for the rice. Rice, seasoning and onions still did their thing and became geogeous. Fresh pressed garlic also beats your powder. I didn't have peppers and tacos, but creme fraiche. The refried beans came canned and where Chipotle flavored, so what. In hindsight it was actually kinda nothing like the burrito you did, but in spirit. It was still amazing. :D Thanks for sharing!
I just made up a batch of the refried beans and the rice. I added a small can of diced chiles to the rice and it is fantastic! Thanks Sam for all the great ideas and recipes!

Agreed and I don't think the wine bag did him any favors. I roast mine over an open gas flame then put into a bowl and cover with plastic wrap.

Simple refried beans are OK but I like to take it a bit further with some bacon grease or mayo for a 'lard' component to make them more creamy and add flavor. Thanks for the rice ideas - I will b sure to try those since I haev yet to make a decent Mexican rice at home.

Poblanos are the fresh green pepper, once they’re dried and change colors they are referred to as a Chile Ancho. Just like a dried Jalapeño is referred to as a Chile Chipotle. A Chile Pasilla is the dried Chilaca pepper. Who knows why they call them that🤷🏽♂️ all I know is they taste great!! Love your videos sam!

If I may give you just a little hint, put your peppers in a plastic bag, as it will steam off the skins instead of absorbing the moisture. :) BTW, love watching you y'all!! Love that you include you family.

Always wanted to know how to make my own Mexican rice and re-fried beans. thanks!
So I made this today, but replaced the chicken stock and tomato sauce with bolognese sauce from the pantry and beef stock as liquid for the rice. Rice, seasoning and onions still did their thing and became geogeous. Fresh pressed garlic also beats your powder. I didn't have peppers and tacos, but creme fraiche. The refried beans came canned and where Chipotle flavored, so what. In hindsight it was actually kinda nothing like the burrito you did, but in spirit. It was still amazing. :D Thanks for sharing!
I just made up a batch of the refried beans and the rice. I added a small can of diced chiles to the rice and it is fantastic!
