90 year old Caterina makes Sicilian 'lasagne' with eggplant & tomato sauce

- Caterina's lasagne are tagliatelle ribbons which she dresses with a fresh tomato and eggplant sauce, using vegetables from her garden. This is an excellent summer pasta dish from Sicily! I suspect the good housewives of Sicily were making this dish long before an enterprising chef gave it the name 'pasta alla Norma'. And as stated in the voiceover, lasagne is a generic word used to describe flat sheets and shapes of pasta. Caterina uses 'lasagne' and 'tagliatelle' to describe her pasta in this session. Both are correct.
Ingredients:
2 medium eggplant/aubergines, sliced lengthways and halved
1 onion, sliced
1 garlic clove, sliced
4 large flavoursome tomatoes
3 tablespoons extra virgin olive oil for the sauce, plus more for frying the eggplant (or use a neutral vegetable oil for frying them)
plenty of fresh basil leaves (around 25g)
100g grated ricotta salata
For the pasta, halve the quantities Caterina uses (unless you are hosting a party).
250g semolina flour (semola rimacinata)
2 eggs and a tablespoon or two of water (it depends on the size of your eggs). Alternatively, omit the eggs and use 125g water

She does it all. Crochets, makes pasta, grows vegetables, makes cheese and the rolling pin skills which always blows me away. Delicious looking meal!

One of the many things I love about this show is you watch celebrity chefs with their fancy knife skills. These women remind me of my Neapolitan Nonna who cut everything with a kitchen knife, right into the pot.

This has always amazed me. Even a modest American kitchen has a set of a 8 or 10 knives--paring knives, 2 sizes of chef's knives, boning and filleting knife, bread knife, carving knife, etc.--and yet these amazing cooks do everything with a little "nonna knife" and their thumb! Like the narrator says, when all the ingredients are "i migliori," you don't need fancy, foreign techniques.
And I bet it tastes much better than pro chefs kitchen
It seems like many of them use the "Nonna knife" and this special technique which entails pushing the object towards the knife and stopping the knife with the thumb. I see it all the time.
This made me cry because my father taught me this tecnique and I didn't realize it was something my grandmother taught him. I couldn't stop thinking about her during rhis video, she was sicilian and she always used to make pasta and I loved her so much and I couldn't even imagine how much I would love for her to be here. Now I'm gonna think about her when I cut the vegetables directly into the pan, thank you for this ♡
It's privilege in true sense to have grandparents around when you're young. It teaches and reminds of what the end of the rat race looks like. If the grandparents are still as jovial and full of life at 90 years of age as this Italian grandma is, it's a hallmark of a life led to the fullest.

I doubt that, because the word losagna derives from the French losagne, which firstly appeared around 1300 (and it is a derivate from a more ancient word). The most common explanation for the word is the Greek origin lasana, which became lasanum in (vulgar) Latin. The word's meaning is 'pot'. The word later eventually became the name of a typical dish that was made in this pot, we know today: lasagne. That could explain why lasagne doesn't always look like the typical bolognese version.
Very interesting, but in the end nobody in Italy calls this kind of pasta "lasagne" but "tagliatelle" or "fettuccine".
Anyway this Is the ONLY channel representing the real italian way of cooking, all the others have something fake, or too sophisticated or completely made up...italian channels as well.
Unfortunately this heritage Is slowly fading with the loss of our grandmothers, mostly in the North of Italy.

The way she works that dough for the pasta and roll it out, that's a pro at work. Will take me ages to do that. Both my grandmothers were from Napoli and like all these wonderful grannies they NEVER used cutting boards, they cut everything with a basic knife while holding the vegetable. So endearing and wonderful to watch 🥰
That's how my Italian dad taught me to make tagliatelle, who learned from his mom, who learned from hers... This was emotional to watch! I miss them all.

I add that is true'. I would add that a shape of pasta can have different names within the country. You didn t travel a lot in the country or you would have know it. For example: in my town Messina we call this shape lasagnette not tagliatelle. Maurizio explained better than me though :).

What a lovely, vibrant lady! She does not look 90. Her grandkids are so lucky to be able to spend so much time with her and learn from her. I helped my grandma with her garden every year until she passed at 94. She would make me homemade Mac and cheese for lunch, and chocolate cake for my birthday.

No hate but certainly she does not speak any foreign language, does not know how to use a PC and much more. I am happy for her but times have changed. If people like her (and my grandma) had to make a living today, I am not sure how far they would get. Nowadays, women have studied, work the whole day, speak several languages, contribute in monetary terms to the family income AND know how to cook. I feel that this is often underestimated.

That is not lasagna....in south italy,we call "sagne ritorte".Simply strips of fresh pasta that you can also twist to make the"ritorte"that means twisted.
This kind of pasta,with eggplant and tomato, is called "pasta alla norma"and is tipycally from Sicily.

How beautiful is she!! I am only 60yrs old with health issues. I can barely even get out of bed to cook. I used to love to cook!! God bless this woman!! My German husband grew up early year's in Italy. His memories of how they started the sauce in the morning as it cooked all day long.
