    All these look unbelieveably good. Would love to see you do a mai tai variation where you split the base between Cachaca and a good Demerara rum. Keep up the great work Lui. Also great dance moves my man.

      @@Lui_Fern Perfect. Call it the Brazilian Mai Tai. Also a video idea, frankenstein two different drinks together into one amazing recipe. Examples being a old fashioned with a daiquri, a mai tai and a hurricane (call that a Mai Hurricane or a Storm Surge.) Would love to see your creativity go wild.

      @@lewismaclean8849I was watching this and was thinking of the absolute same thing before I read your comment. I just bought a bottle of Cachaca and was thinking of doing exactly what you described. I also was thinking about doing a Caiprinha/Mai Tai combination.. cane sugar, muddle limes, add orgeat, curaçao, cachaca and then funky Jamaican rum!

    Hi Lui, very interesting show! I do my own Mai Tai rum mix using Woods, Smith & Cross, Goslings 151 and Appleton 8. It works a treat across all the riffs I’ve tried.

    I like doing riffs where I replace lime juice with acid-adjusted pineapple or pomegranate juice. Brings in that nice acidity without having to also add lime juice to the cocktail.

    Good post. After a trip Hawaii, I was really disappointed with Mai Tai experience. Forced me to do some research. I am a big fan of the classic - liked your balance but 2 oz of Jamaican rum is a lot. I premix 4 rums that I like and so make it easy to pour. Everyone should find their preference - but I like mixing in some agricole, aged non-Jamaican, etc. make a blend that you like.

    Somebody had to do the hard work, so here's all the recipes.
    Classic Mai Tai - Lui Fernandes
    2 oz Jamaican Rum
    ¾ oz Lime Juice
    ½ oz Orange Liqueur
    ¼ oz Orgeat
    ¼ oz Demerara Syrup
    Shannon Mustipher’s Mai Tai
    2 oz Hamilton 86
    ½ oz Paranubes
    ½ oz Orgeat
    ½ oz Lime Juice
    ½ oz Dry Curaçao
    Rye Tai
    2 oz Rye Whiskey
    ¾ oz Lemon Juice
    ½ oz Orgeat
    ¾ oz Pineapple Juice
    Dash Angostura on the top after shaking.
    Kentucky Mai Tai
    1 oz Bourbon
    1 oz Mezcal
    ½ oz Orgeat
    ½ oz Lemon Juice
    ½ oz Peach Liqueur
    ½ oz Cynar
    Garnish with mint & pineapple wedge.
    Bitter Mai Tai
    1 ½ oz Campari
    ¾ oz Smith & Cross
    1 oz Lime Juice
    ¾ oz Orgeat
    ½ oz Dry Curaçao
    Tia Mia - Ivy Mix
    1 oz Del Miguey Chichicapa
    1 oz Appleton 8
    ½ oz Dry Curaçao
    ¾ oz Lime Juice
    ½ oz Orgeat
    Satin in a Coffin
    1 ½ oz Del Miguey Vida
    1 ½ oz Lime Juice
    ¾ oz Orgeat
    ½ oz Dry Curaçao
    ¼ oz Vanilla Syrup
    3 dashes Grapefruit Bitters
    Mai Tai Spritz
    1 oz Appleton 8
    ½ oz Orgeat
    ½ oz Lime Juice
    ½ oz Dry Curaçao
    Shake & strain, top with sparkling wine.
    Mai Sha Road Na
    2 oz Smith & Cross
    ½ oz Banana Liqueur
    ¾ oz Lime Juice
    ½ oz Macadamia Nut Orgeat
    Breakfast Mai Tai
    1 ½ oz Smith & Cross
    ½ oz Banana Liqueur
    ½ oz Orgeat
    1 oz Lime Juice
    ¼ oz Cinnamon Syrup

    Orgeat is pronounced or-zhaat if you speak English or or-zhaa if you speak French.
