- After years of obsessing over the perfect Mai Tai, Kevin Crossman finally unveiled his 'ultimate' Mai Tai recipe in 2019. But does it really live up to the hype? There's only one way to find out!
---------------------------------------------------------------------------------------------------------------------------
To make the cocktails in this video:
The Ultimate Mai Tai
1 oz fresh lime juice
1/2 oz Latitude 29 orgeat
1/2 oz orange curacao
1/4 oz Demerara syrup
1/2 oz Appleton 12 Rum
1/2 oz Smith and Cross Rum
1/2 oz Plantation OFTD Rum
1/2 oz Plantation Xaymaca Rum
Shake with crushed ice and pour into a double old-fashioned glass. Fill with more crushed ice and then garnish with a spent lime shell and a mint spring.

Ultimate Mai Tai blend, of course #####
Spike needs to have you come on his show!
@@maitaioneonseems to be very popular
Thank you so much @ultimatemaitai for coming up with this rum blend. I always have this premixed on my bar, ready to go.
@@tomhubbard7053 Cheers.
Kevin's recipe is terrific. It inspired me to find my own favorite: 1oz Hamilton Pot Still Black + 1/2 oz Appleton 12 year + 1/2 oz Rhum Clement VSOP. Eventually, I also subbed out the Curacao for Hamilton Petitie Canne Shrubb as well. It's funky, flavorful, and a bit grassy. #####
Favorite blend so far: El Dorado 12 and Smith & Cross
Love 1.5 denizens and .5 smith and cross! #####
I've been using
-1oz Plantation 5 Year
-1/2oz Plantation 3 Star
-1/2oz Smith & Cross
#####
Looks delicious!
Thank you for putting the recipe in the description. Looking forward to making it
My favorite Maii Tai blend is whichever one you're pouring! I love trying differnet styles of Mai Tais. #####
Here is my favorite Mai Tai:
3/4 oz Appleton 12yr
3/4 oz Clement VSOP
3/4 oz Lime Juice
1/2 oz Clement Creole Schrubb
1/4 oz Orgeat
1/4 oz Simple syrup
Garnish with spent Lime and Mint as the original
This is the Club 33 version made at Disneyland. The change from Dry Curacao to Creole Schrubb really elevates this to the next level.
Oooooh… interesting! I’d love to try that.
I very much enjoy this format
Thank you!
I'm really glad to hear that none of the rums smell offensive.
Kevin Crossmans Mai Tai blend has been my go to for a while now. O.F.T.D, Smith & Cross, Appleton 12, and Platation Xaymaca #####
Awesome video as always!
I've been loving blends that include a rhum Agricole in them.
Ultimate mai tai blend + an extra 1/4oz of Wray & Nephew… So good! #####
Nice show and great Mai Tai, Spike. My favorite rum blend is 1 oz Denizen MR 8, .5 oz S&C, and .5 oz Coruba ####. Cheers
Five pounds!
Love these videos. Rum blend: Hamilton Stache 1oz, Pusser 1oz. #####
Current Favorite Blend!
•Hamilton Pot Still Black Jamaican Rum!
•Eldorado 12 Year!
#####
Something About This Blend Just Hits Different In A Mai Tai!
That's funnt because that's the exact rum blend I came to as welll! Great minds as they say.
I love this. I've been drinking these since I first read about them in 2019. I actually pre-blend the rums in 1 liter batches. My only problem is Plantation Xaymaca is no longer sold in Ohio. I was lucky enough to get three bottles at the last call price of $17.99 each. My favorite rum blend is a 50/50 mix of Appleton 21 and Plantation 24 yr from Long Pond. I have not seen either in over 2 years, no matter, too expensive to use in cocktails.
I love that 21 year Appleton too! And yeah, it's not cheap.
A lot of the Plantation products are being run down at retail to try and sell everything out before the bottles with Planteray labels come out. Should be back soon. Your blend with Long Pond sounds great.
Aloha Spike! Great episode! And I finally tried the Breezeway Blend today! Neat, in a daiquiri, and in Trader Vic’s Banana Cow. You and Ed should be very proud! ❤ 💯
Thank you! Glad you enjoy it!
New tiki person and a new sub, thanks for the recipe!
I have used this recipe the most. My favorite rum for this is the Appleton combined with the Smith and Cross, best Mai Tai ever, #####
Ultimate Mai Tai blend! Once I tried it, I couldn’t go back to a “normal” Mai Tai #####
Ultimate Mai Tai blend is my favorite and it works super well in a Trader Vics Grog as well! #####
I have been partial to the Ultimate Mai Tai blend, I keep a pre-mixed bottle at my bar at all times. #####
Cool!!!!
Great video 👏
Thank you!
I love mixing different rums and seeing how they change the drink. For ease and consistency, I mix 8 oz at a time, keep in a bottle, and Can be use it for Mai Tai, Three Dots and a Dash, Navy Grog- maybe even a Daiquiri for fun, or a Zombie. Here is my latest blend, 2 oz of each- Neisson Blanc, Neisson Eleve Sous Bois, Coruba Dark, and Smith & Cross. I like the slightly higher proof. ####
New to Rum, Made a couple Mai Tai's recently.
Favorite Blend, Islander Silver Rum and Myers's Dark Rum #####
I’ve done a similar blend but swapped out the smith and cross for Ron Zacapa 23. Mellowed out the dryness of the xayamaca and added a little more oak and molasses. Top 3 favorite cocktail. Love that it is rum forward and perfectly balanced.
I’ve also tried
1 oz Appleton 15
1/2 oz Hamiton Jamaican Blond
1/2 oz Barbancourt 5 star
Instead of curaçao, I’m using Clemont Petite Shrubb, it’s epic, definitely try it!
I do the OFTD + Smith & Cross, but now I need to try this! #####
I do the KC Ultimate Mai Tai Blend myself. I use Liber & Co Orgeat if I don’t have the Lat29 on hand. I also make a couple of other house varieties, but Kevin’s is always a winner. As I’ve noted, it’s ruined several commercial Mai Tais for my wife. #####
1oz appleton estate signature blend / 0.75 oz plantation dark rum / 0.25 oz smith & cross ####
Favorite Mai Tai rum blend.... 1oz Smith & Cross Jamaican, with 1oz Breezeway Blend #####🔥🔥🔥🔥🔥
I was out of Pierre Ferrand so subbed Clement Creole Shrub and it was delicious 😊
Yes, I love Clement Creole Shrub in a Mai Tai.
Current favourite blend:
1oz Appleton 12
1/2oz smith & cross
1/2oz Kohana Kea
#####
Kohana kea is a great Hawaiian Agricole rum, picked up on a previous visit to Oahu. But I also love Kevin’s ultimate maitai blend and absolutely have a mixed bottle of that.
Those glasses look incredible.
Sounds great that Kea is awesome
@@tommymatheson7519 absolutely, I know Agricoles in mai Tai’s are a contentious subject, but that 1/2 oz addition mixed with the Jamaicans is rather lovely. I wish we had access to some of the US brands - Hamilton and denizen have no distribution here in the UK so have to get what runs I can when I visit the USA.
Man I’m going to have to make this only need one of the rums. My go to is 2oz of Denizen #### thanks for another great one Spike
Denizen mixed with some Appleton 8 and OFTD is my goto Mai tai blend
I've been using the exact blend as described in the video! #####
That's awesome!
I've been experimenting with different bottled orgeats, so my orgeat has been rotating. I'm now excited to try that Beach Bum Berry's Orgeat!
Currently I'm working through a Liber & Co, but my favorite Mai Tai recipe right now is --
Liber & Co Orgeat,
Homemade Demerara
Fresh Lime Juice
Smith & Cross
Wray and Nephew Overproof white rum
I love love love playing with new rums though, whenever I get a new bottle of rum, the first thing I do is try it in a Mai Tai blend.
#####
I take Wray and Nephew unaged and then age it in a 1L barrel for 6-10 weeks. 2oz of this home aged W&N is the best rum blend I've found.
2 oz home aged Wray and Nephew #####
Tried the ultimate Mai Tai blend for the first time on Wednesday last week by chance. Big fan and it's definitely rum forward. Something I will definitely keep in the rotation when I want a bit of a stouter drink.
For a quick and easy Mai Tai I'm a big fan of using 2 Oz of Denizens 8. For extra effort I really like the Utimate Mai Tai blend, and if I'm feeling spendy then I'll use 2oz of Hampden Great House (any year edition). #####
I use 1oz of Xaymaca and 1oz of Wray and Nephew White Overproof. Keeps it simple and quick to make plus adds that extra little bit of funk I think the drink really needs.
This particular rum blend has been my go to rum blend for mai tais and several other cocktails ever since I discovered it last year. I almost always have it blended in bulk in a separate bottle, so I don't have to do the half and a 1/2 and a 1/2. And a half thing. ####
My favorite is pot still black and Coruba, but I lean harder on the Coruba for the split. Or a Denizen Coruba split but love the funk the Black brings #####
ultimate Mai Tai blend #####! For the win!
Smith & Cross and Bumbu ##### Probably pretty amateur but I don't have many rums here so this gives it some strength but some sweetness too.
Its (possessive), not it's (= it is). Love the format, too!
Why must you auto-correct?
I was skeptical but doubling the S&C instead of using Xaymaca (the first barrels they made were different, better) & subbing Clement Creole Shrubb for the Curaçao it is an exceptional Mai-Tai!
I will try this blend. #####
My current favourite:
1oz O.F.T.D.
1/2oz Myers
1/2oz Canario Chachaca
Ultimate mai tai blend #####
I like the vanilla note that Koloa Dark brings to a Mai Tai. Yum! #####
I enjoy Kevin's blend, as well as Hale Pele's: 1 ½ oz Coruba, ½ oz Wray & Nephew white overproof #####
My fav for my Mai Tai is Smith and Cross and VSOP!!! Homemade Orgeat of course!!!! #####
Ultimate Mai Tai is my favorite blend as well! #####
I'm a fan of Coruba ##### . Recently I've been mixing Coruba and Smith and Cross.
That sounds simple and delicious
Favorite mai tai rum is Trader Vic's brand Royal Amber ... give it a try! (if you can find it) + float of OFTD #####
Current favorite rum blend is Appleton Estate & Plantation/Planteray, so looks like I should try the Ultimate Mai Tai! #####
Rhum Barbancourt 15 + Smith & Cross #####
Thanks for this combo though! Definitely something to try when we have our next rum-meet-up.
You bet!
This is our got to house blend. I have it matched and ready to go at all times. The only change I make is occasionally subbing denizen merchant res and Plantation stiggens fancy for the Xaymaca and Appleton. #####
Honestly the ultimate mai tai blend is one of my favorites #####
Spike-Your Breezeway Blend Rum is really nice. It makes a smooth, tasty daquiri; my hat is off to you and Ed Hamilton.
Thank you so much!
My favorite blend is Smith & Cross + Goslings (50-50) and a splash of Plantation OFTD on top! Rich, funky and delicious! #####
I do the 44 with Hamilton Florida Rum Society rum….delish
Appleton 12, Clement VSOP #####. Thanks, Spike!
I've tried many Rum blends in the '44 Mai Tai. Many of them have been very good, but I love Kevin's Ultimate blend so much that I keep a bottle of it premixed at all times. I'll continue to experiment, but currently, the Ultimate blend is my favorite. #####
It really is good
Smith and cross plus the ole Appleton banger####
Appleton's 12yr, lemon hart 1804 and LH151 has been my current but I've been making a hawian tia with a mix including blackpool to offset the OJ and pineapple #####
I love to do an ounce each of smith & cross, and oftd, with a float of Hamilton 151 on the top. The sleepy time blend ####
My favorite so far is equal parts Appleton 12, Clemente VSOP, OFTD, and Smith and Cross. Need to try the ultimate blend! #####
About a year ago, I visited the Bamboo Room Tiki Bar in Savannah, GA. Fun place!!! I sat at the bar and told the bartender I wanted a smooth sipping rum that was more column still than pot still--I am not really a fan of the strong funkiness in so many pot still rums and I prefer the smooth, mellow flavor that a good column still can offer. The bartender recommended I try either the 15 or 17 year Panama-Pacific rum. I tried the 17-year over a large ice cube and it was delicious! When I got back home to Atlanta, I spent a little time trying to find a store that carried this intriguing rum, but no luck. Some time passed and I forgot about it for a while. Then, one day, I was at a non-descript neighborhood liquor store near my house and there they were... 3 or 4 different selections of Panama-Pacific. I grabbed one of each to stock my home bar. Since then, I have come up with what I call a "Pan-Pacific Mai Tai," using 1 ounce of the 3-Year Panama Pacific White Rum, and 1 ounce of the 15-Year Pan Pacific Gold Rum. It truly makes the smoothest Mai Tai I have ever had. Thank you, Bamboo Room, for introducing me to this great rum! Steve from Atlanta. #####
Wow, thank you for the story! That's super interesting.
Greg Easter's Wray & Nephew 17-year Dagger Rum clone blend makes the best Mai Tai I've ever had, which makes it totally worth the two weeks it takes to create! The Ulitmate blend is definitely a close runner up, as is the Appleton 12/Rhum Clement VSOP combination! #####
Clement is a great choice.
I agree the Easter 17 year clone blend makes a great mai tai.
I normally use Denizen but have also used the Ultimate Mai Tai Blend #### send a set to Nick MacKenzie ####
Love a Mai Tai!! Elderado 12 year, Appleton 12 year and Wray and nephew overproof. #####
I’m a Mai Tai rookie. I still need to buy the O.F.T.D. & Appleton 12 to try the ultimate blend. Looking forward to it #####
i do the Kevin Crossman blend, and add 1/4 oz of Rum Fire. Sometimes I make it with Creole Shrubb instead of the Pierre Ferrand. Just acquired the Trader Vic's mai tai glass last week. #####
Ooooh... Rum Fire!! 🔥
The Breezeway blend of course! #####
I still haven't tried it in a MaiTai yet!
Just had smith and cross for the first time and I’m in love
Smith and cross #####
Had a contest with several friends using Martin Cates recipe. The winner was
Doorly's XO & Appleton 15 #####
Oooooh....
Yep very tasty
Love doing Denizen and OFTD in my Mai Tai! #####
Spot on!
Appleton 12 Rum, Smith and Cross Rum, Plantation OFTD Rum, Plantation Xaymaca Rum #####
Got my first two bottles of Beeezeway Blend Friday! I left the last bottle on the shelf for the next Breezetonian who might happen by. I would have been bummed to see that slot on the shelf empty! Store owner said that the Breezeway Blend had been flying off the shelves and he would be ordering more when it becomes available again. I usually use Hamilton Jamaican Pot Still Black and Denizen. #####
Sounds delicious. Rum blend: 1.75 oz Denizen Merchant Reserve + .25 oz Hampden Estate 8 for a little extra kick #####
I always make my Mai Tai's with 100% Hamilton Black##### love the funk. ... Also because I got a killer deal on 4 cases of Hamilton Black a few years back!!
My favorite so far is still Vic’s from his book. And as you said, mixing and matching the rums. I also use my homemade Demerara syrup.#####
It's hard to beat that recipe!
Currently working with 1oz Saint James + 1 Oz Appleton 15 yr, but still experimenting as the rum collection grows! #####
'Nuther good show, Spike! Now to add another couple of Plantation rums to the collection.... 🙂
My favorite rum blend that I use in a lot of tiki drinks is what I call my "house dark" blend: equal parts Dr. Bird, El Dorado 12, Plantation OFTD and Hamilton 86. It's aiming to be what I imagine the old Dagger Punch and Myers's 97 proof rums from back in the day tasted like. It's especially killer in a Planters Punch. Cheers! #####
I love this!
1/2 oz Appleton 12 Rum
1/2 oz Smith and Cross Rum
1/2 oz Plantation OFTD Rum
1/2 oz Plantation Xaymaca Rum
I am having trouble finding the Xaymaca so just upped the Appleton. #####
Home Infinity Rum Blend!!! Makes it unique every time and tastes amazing.
But for a consistent rum blend, I use:
• 1 oz. Hamilton Jamaican pot still black
• 1/2 oz. El Dorado 12
• 1/2 oz. Ko Hana Koho (I prefer Koa barrel, but for only use it sparingly because I won't be going back Hawaii anytime soon)
#####
Just got my Breezeway Blend today! There was actually a line to pick up pre-orders, and no extras for the shelf! I usually go with Hamilton Demerara 86, Plantation OFTD, Plantation 3 Star, and Doctor Bird for an extra funky Mai Tai, cheers! #####
Crazy to hear there was a line to pick up the orders! What state are you in?
@@BreezewayCocktailHour this was at Tops Liquor in Tempe AZ. To be fair, everyone on the wait list was called at the same time, so we all headed over about the same time. Looks like about 20+ bottles were handed out... great stuff!
Appleton 12 year and Appleton signature are my go to #####
My favorite blend
- 1/2 oz Hamilton 151
- 1/2 oz Eldorado 12
- 1/2 oz Appleton 8
- 1/2 oz Hamilton Jamaican Gold
SPIKE! Highly recommend you try this.
The Ultimate Mai Tai rum blend, with just a teaspoon of Holmes Cay Grand Arome,
.25oz each of Clement Creole Shrub and Dry Curacao
1/2 Orgeat
3/4 oz lime
5 drops saline solution (80g water, 20g salt)
Garnish as you normally would.
This is my ideal Mai Tai!
####
I keep a decanter filled with a half-and-half mix of Smith & Cross Jamaican and whatever aged rhum agricole I can find from Martinique at my local liquor stores. The Martinique selection varies widely, and rarely do I find the same bottles available month to month. #####
Favorite Mai Tai blend: El Dorad9 12 & Smith and Cross ####
This is what I currently use:
1/2oz Appleton 12
1/2oz Hamilton 151
1/2oz Worthy Park Single Estate Reserve
1/2oz Ron del Barrilito 3 Star
#####
Ultimate Mai Tai blend #####
My favorite combo for a mai tai is 1oz Doctor Bird and 1oz Clement Vsop love the floral/ funk combo. #####
You had me hooked on 1oz Appleton Estate 12 year and 1oz Clement Rhum Agricole #####
My favorite Mai Tai rum blend is: 1oz Appleton 12 yr, .75 oz Clement VSOP and .25 oz Rum Fire ####
Plantation Original Dark, nice and simple! #####
