This recipe is legit! It does taste like tocino. I fried 1 piece of meat after 3 hours of marination just to find out how it tastes like. It was so good! I'm glad I found your channel. I actually made a mistake and put 1/4 cup of pineapple juice instead of 1/8 and it turned out fine. I also used almost a tablespoon of garlic powder instead of actual garlic cloves because I felt lazy to dice garlic and my family likes lots of garlic flavour in our food. I also added a bit more salt. It was perfect!!! Tocino is very expensive in Filipino stores here in UK but thanks to your recipe I can just make our own! We cannot wait so we're gonna have some of the tocino for breakfast tomorrow with just 15+ hours of marinade and we'll eat the rest in 2 days time to test the difference. Thank you so much!

Yes that is the traditional way of cooking tocino specially many years ago because the way people make it is using thick slices of pork with fat like a sliced pork belly or pork chops. You have to boil it first in small amount of water until it evaporates.

Actually even the commercial tocino won't last long if you will not keep it in the freezer. If you will just put it in the ref it will ferment because of the sugar even though it has preservatives like salitre. If you will put it in the freezer then it will last for months.
Kailanga kasi na may juice or acid para ma cure yung tocino. Yung tocino mix powder sa mama sita may citric acid yata. Basahin mo na lang ingredients nun.

Ok naman po na hayaan n lng yung marinade sa pork. Medyo hassle lng konti pag ipiprito na kasi kailangan pa i drain ulit. Kaya mas ok siguro alisin n lng yung marinade.😁

@@ellaflower786 Yun kasi yung lumang style ng pagluluto ng tocino nilalagyan ng tubig. Yun na rin kasi nakagawian para maluto ng maigi yung tocino. Kasi yung tocino noon makakapal ang hiwa at may kasamang taba at balat. Meron pa sigurong ganoon sa mga palengke yung parang nilagyan ng dyobos o yung pangkulay ng damit pero food coloring yun. Yung nauso na yung mga pampangas best na tocino, maninipis kasi hiwa kaya diretso na prito ginagawa. Kahit basahin mo instruction sa likod ng balot prito agad wala ng tubig.

Hi, the one you purchased is already marinated and cured. The recipe in the video is using fresh sliced pork (pork shoulder) and you will need to marinate it with the ingredients shown in the video. The ingredients are also listed in the description box below the video.
Processed pineapple juice subjected to heat no longer contain the enzyme bromelain that helps digest or tenderize meat or protein . So , it has to be fresh . But caution is required on the length of marinating time - the most is 15 min or the meat turns to powdery consistency . So , if you're rushed , fresh pineapple juice is the solution . However , I prefer kiwi or asian pear strained juice for 24 - 72 hrs. marinating. I hope these tips are of use to you cooking enthusiasts out there.

Sa chiller muna para ma cure yung karne tapos pwede na sa freezer para hindi umasim. Nag feferment kasi tocino pag hindi naka freezer.

As long as it is pure pineapple juice you can use it. Usually it is canned pineapple juice.

Vinegar is used in making pork tapa but never tried it in tocino. I think orange juice might work in pork tocino. :)

May I use calamansi juice instead of pineapple?
Yes you can use kalamansi but it will turn out like pork tapa. I haven't tried it but maybe it will taste as good as pork tocino. 😁

Yes pwede na ilagay sa freezer. Siguro pwede na overnight ang curing kahit di na 2 days baka umasim.

Pag freezer kahit 3 months tatagal ito.
Pwede po ba yung pineapple juice na nasa kahon lang yung wlang pineapple chunks
Hi Diane, pwede rin naman siguro yung nasa kahon. Pang lasa lang naman gamit ng pineapple juice.
Processed pineapple juice subjected to heat no longer contain the enzyme bromelain that helps digest or tenderize meat or protein . So , it has to be fresh . But caution is required on the length of marinating time - the most is 15 min or the meat turns to powdery consistency . So , if you're rushed , fresh pineapple juice is the solution . However , I prefer kiwi or asian pear strained juice for 24 - 72 hrs. marinating. I hope these tips are of use to you cooking enthusiasts out there.

Yes it's ok not to use any food coloring. But you can use annato seed powder (atchuete powder) for a substitute. 😁
