I just cooked the pork following your instructions and it turned out AMAZING! Thank you for this recipe. I substituted the oyster sauce for fig sauce and it tasted very very good too.
There are many different ways to make adobo or the order in which you cook the ingredients. I like that yours has onion and calamansi. And even though you have some calamansi in it, it still is not enough acid. The origins of adobo go back to the time before refrigeration, when Filipinos used cane vinegar to help preserve all the leftover meat when they slaughtered a pig (used to preserve seafood too). The vinegar is an integral part of the taste of "Pork Adobo".

Im cooking this at the moment, still waiting for the pork to be soft and tender. I've added 1bottle of san miguel apple beer and 2cups of water for 1 kilo of pork liempo. Im experimenting and trying to get a different flavor from it. Im excited to taste this later. I followed your cooking techniques. Thanks Kuya Fern! Update: the finish product is so tasty with a dash of bitter and sweet. I also added 1 chilli pepper chopped. Voila!! Cant wait for dinner time with my babe.

Fern i appreciate your efforts, if i may. How about trying to make those liempo crispy before adding the oyster and soy sauce? It would be another level. Although you can't boil it once you've made it into chicharon.
