The whole process is when the water that was filled in the drum is let go after closing the air and filler valves, the water leaving the drum creates a low pressure, which in turn pulls the water from the one way valve connected pipe which is the smaller intake. For the suction to build up to pull water from the inlet, the drum has to be higher than the outlet but the inlet can be way below the outlet. Examples are pulling water from standing well which are deep than the ground level. Once the cycle starts you can hear the water flowing from inlet into the drum.

The vertical pipe at the outlet is useless. Waste of money. Pipes on the barrel is for filling the barrel with water. Using 2 makes it easier to fill via one while air is let out via the other.
It works like when you suck your drink from the glass using a straw, when the water from the full drum is release, it will create a vacuum in the drum and the vacuum will suck the water to normalise the pressure inside the drum, as more water is drained, more vacuum will be created, thus more suction. It is simple physics, maybe they don't teach physics in religious schools.

With a hose, you must find a way to fill the hose 100% with water. With a drum you do not need any foot valve at the input an do not need to fill the input pipe as log as it is reasonable short compared to water volume in the barrel. Besides, if there is a small air leakage, the barrel can absorb some air before the siphon stops.
