I told him to call his Mom to see how she canned hers. She pulls her's and weaves it together until it is dried, I panicked because we had to do something with all this garlic. I hate wasting anything as good as garlic!! I went to Pinterest and read lots of recipes. Yours made the most sense to me and it lasts more than 6 weeks and doesn't have to be kept in the frig. You are my hero today!!

I think that bluish tint must be from the ends of it because it's where the root and the head makes it more dense there and the color mixed with the yellow of garlic color would make it blue. He said don't eat 1 until it turns color all the way.

You do want to cover the jars while water bathing, usually 1" of water above, you just want to make sure they stay covered in water the entire time... if you don't have enough head space, they will be fine as long as they seal.. we keep garlic in the pantry a year or 2... 😋

I'm a bit cornfused. If the USDA says don' can garlic then why do so many canning recipes {soups, stews, sauces} call for garlic? But don't try to figure out the government. You'll find yourself a resident of the Happy House! Anyway nice video young lady.
The reason your garlic changed color is due to cutting your garlic with a metal knife. Metallic causes chemical reaction. Try using plastic knife or not cutting at all.
Removing air bubbles from jars before canning so if there's too much air in the jar, it can interfere with the jar's ability to drive out the extra air in the top and develop a good seal... Honestly I have forgotten to debubble a few times, but never had an issue, but I was taught to take all the bubbles out. 😉

My Mom used to use oil and a dark brown bottle. They just kept well. Plus, we had the added benefit of garlic infused oil!

I have done this too....aswell as ginger in a sweet vinegar.....the young ginger turns pink

I can pickles, pepoers and onions and I use vinegar in all those and Don't have any issues with the lids.

N1Patriot garlic can be packed in oil, but I believe it has to be refrigerated. I’ve never tried to can it that way.
