    My Mom used to use oil and a dark brown bottle. They just kept well. Plus, we had the added benefit of garlic infused oil!

    Thanks for sharing this. I have never canned garlic, but this year we decided to move our row of garlic to the outside row of our garden. My husband came in with a basket full of fresh garlic. I told him to call his Mom to see how she canned hers. She pulls her's and weaves it together until it is dried, I panicked because we had to do something with all this garlic. I hate wasting anything as good as garlic!! I went to Pinterest and read lots of recipes. Yours made the most sense to me and it lasts more than 6 weeks and doesn't have to be kept in the frig. You are my hero today!!

    I have done this too....aswell as ginger in a sweet vinegar.....the young ginger turns pink

    I know a guy who puts garlic in organic Apple cider vinegar for at least a couple of weeks to a month UNTIL it turns like a teal color and then he eats 1 or 2 of them every day and he said that it keeps the doctor away and gives men more sexual stamina. He said don't eat 1 until it turns color all the way.

    Hello that is so cool. Another great idea, though most of us never thought about canning garlic but we would buy the same thing in the grocery store without a single thought.     I just pulled my garlic out of the ground (aussie) and it suffered witches broom, so wont store well, thanks for this, I only WB and I was hoping to can it and now know that I can, can lol

    WOW, that's AWESOME LOVE it. How long is it shelf stable for 1 or 2 years? What about the jars with the pepper flakes can you taste the pepper or do you need to wash those off as well?

    I will try this next year. I tried putting mine in oil this year…did two jars… and they both spoiled. Stunk to

      I just put some sliced garlic and oil in a jar and refrigerated. Is this not going to work out for me? First time doing this. I used olive oil.

    I canned garlic for the first time last month as I watched your video. I did it exactly as you did. Wow they came out great. No bad vinager tast at all. Question how long will they last?? I plan to do more so hope a shelf life for a year or so.

    Once canned, what is the shelf life? I know a lot of people say six months to one year on some canned good, but we have eaten things older than that. Just was curious. Thanks!

      I am interesed to know the same information. If you think that garlic has been used for centuries as a "natural antibiotic", I would dare to think that garlic in vinegar (a preserving liquid) could be kept for years.

    What a great idea I hate when my garlic goes bad in the winter I live in a rural area in Virginia and in the winter I don’t like to get out Who wants to get out right now anyway LOL ... and we just bought a house with 2 acres even deeper in the country so I need stuff like this

    I think that bluish tint must be from the ends of it because it's where the root and the head makes it more dense there and the color mixed with the yellow of garlic color would make it blue. I'm just guessing of course. I am getting ready to can some just like you just showed us so I wanted to stop by and say thank you so much! I'm excited! I'm going to have one jar with a jalapeno from our garden one with a bunch of thyme sprigs (so they don't go bad before I can use them or dehydrate them), and then 2 plain ones.
    I'm curious what you use your canned garlic for? I may have missed it in the video but I wonder if roasting is still an option even after it's been canned? Also, do you have an estimate on how long these will store safely in a cool pantry?

      Extra crunch is an additive that you also use to keep pickles from getting too soggy when canning.

    Did you not have to cover the jars with water? Not super familiar with water bath canning. I thought the jars had to be submerged?

    That'll store over 6 months...no need to preserve it further. Also some varieties, such as Oregon Blue, are known for their blue hue. Its normal

    I want a water bath my garlic but I sure don't want to use vinegar because vinegar and the metal ring and lid are bad I've always been told you don't combine those two items I make fire cider and that's the biggest No-No so can you open up one of those jars and tell me how it taste and how the lid reacted cuz I got a ton of garlic on my hands and I'm really searching for an answer as to how to preserve it.

      I can pickles, pepoers and onions and I use vinegar in all those and Don't have any issues with the lids.

    I’m new to canning your video was awesome . Great and to the point thank you . I was told when ya boil it ya make sure the water always covers the cans is that right? Also after ya boil them for ten min. How long do u let it sit in the canner before you remove them. How long is it shelf stable ? I don’t think I left an inch head space will they still be ok? Thanks so much .

      You do want to cover the jars while water bathing, usually 1" of water above, you just want to make sure they stay covered in water the entire time... if you don't have enough head space, they will be fine as long as they seal.. we keep garlic in the pantry a year or 2... 😋

    As much green or blue your garlic gets ,BETTER quality.
    It is due the Alicine.
    Chinise people pay a lot of money for Lava garlic(a blue garlic)

    Have you ever canned the garlic with salt and water? I would be grateful for your thoughts. I watched one video where it was with salt and water but was pressured canned for 40 min. That seems like a long time???

    Okay, so I can some garlic but later on I only need 2 cloves but have 24 cloves canned. What do I do then, after I've opened the jar? Does the rest have to go in the fridge because it's been open, do I put them in a bath again? It's really important to know what happens AFTER you open the canned jar? Thanks

      Yes, pop them in the fridge once they are opened, they will last months in there. 😉

    hmmm listened to the video, andcread all the reviews note people posted I saw zero or he4d zero reply on how long will canned garlic last ? . I mean why not just store in a cool storage if it has no proven shelf life being canned. just not convinced all the canning work and expense acteueally long term preserves. thanks

      Vinegar is the acid. Olive oil. Is great, but it has to stay in the refrigerator.

    The reason your garlic changed color is due to cutting your garlic with a metal knife. Metallic causes chemical reaction. Try using plastic knife or not cutting at all.

    I'm a bit cornfused. If the USDA says don' can garlic then why do so many canning recipes {soups, stews, sauces} call for garlic? But don't try to figure out the government. You'll find yourself a resident of the Happy House! Anyway nice video young lady.

      Yes, with waterbath canning your jars should all be cover with about 1" of water.

      There's these silicone tunes. You place your garlic in and roll the peels away. Smooth as butter. 😀

      Cover with water 1" higher than the jars.

      N1Patriot garlic can be packed in oil, but I believe it has to be refrigerated. I’ve never tried to can it that way.

    Why take bubbles out?

      Removing air bubbles from jars before canning so if there's too much air in the jar, it can interfere with the jar's ability to drive out the extra air in the top and develop a good seal... Honestly I have forgotten to debubble a few times, but never had an issue, but I was taught to take all the bubbles out. 😉

      Garlic can turn many shades and colour depending on the type of garlic. It’s perfectly fine😊
