Question: I get the mix that goes into making concrete. However, why can't a driver add water when they get to the construction site ?? This would end any trucks ending up with a load of solid mix in their mixer. Is this a problem ??
They can and they do but more water reduces compressive strength. It's really an amazing science but the sidewalk in front of your house doesn't have to maintain the same level of criticality as the Hoover Dam or the launch pad at Spacex. It's more than just water (slump), it's mix design and Time from batch to pour, air...etc.

The kiln would be the hard part 😂. I laid brick in cement and lime kilns and the are huge. Takes alot of power to run them.

Adding water at the construction site can compromise concrete quality and strength. It's best to ensure proper mixing at the batching plant.
