It’s all down to the gas mix. In Ireland it’s 80/20 nitrogen, oxygen which you can unfortunately not buy in the UK. We have to make do with 70/30 which is is the same as smooth bitters use such as John Smiths. It’s not fair

Fascinating. When I was coming to the end of my pint slinging career, the nitro cooling was just being installed. It took some time to get used to. Great system once the bugs were worked out, all the beer was perfectly cold and even into a warm glass on a busy night (I hated doing it but you just had to!) the beers were always cold enough to drink. I always topped Guinness by pushing the tap forward as I was taught that way.

My grandfather worked for Guinness as the regional quality control technician, it would have been from the mid 50s until the early 80s. When he relocated from Dublin to Wexford they gave him an interest free loan to buy a new house, for 4,000 pound.

What a great insight into the mastery of good Guinness. At last, after drinking Guinness for over 50 years there's a topic on the pour, glass cleanliness. Always knew a bad pint jus by how it was poured and always knew when to leave it. At least these days there's more recognition of how important it all is.

    Got back from Dublin Saturday.
Shtick in the glass generally happens to older glasses as used more and the filum on the inside of the glass has worn away. Number on the side tells you how old the glass is, M18 means manufactured 2018, M21 2021 etc.
Also when pouring cans, don't do the double pour. Single pour onto the harp all way.
All from Marc who works at the pouring section on the Guinness tour.
Went in a few you recommended, Bowes won for the pint, noticeably better pint than anywhere else I went. Didn't manage Gravediggers though, definitely next time.

4 excellent pubs in the village. I didn’t see a single blue shyte anywhere but enjoyed my own body weight in the creamy whiteness atop dark deliciousness that was poured from the UNTAINTED(!) tap of Original Guinness WITHOUT the spaffery of ‘Extra Cold’. It was nowhere near as good as The Gravediggers in North Dublin, but it was the best I’d had in the U.K. And we shall go back again.

Sorry Guru, I agree with most of your recommendations but this pub I believe is over rated. I have not been impressed with the standard of the G here on many occasions that I have visited. Case in point, I walked in last Sunday and ordered 2 from a young lady (red flag) then off to the bog. When I came back, one of the pints had clearly been sitting there for a while and was then topped up. When my mate went in to order 2, I told him to observe but he was back within a minute. Why? Because she had been stacking pints and topping up as required. The pub was not busy at all so need for this.
BTW another over rated pub for G (in my opinion) is Mulligan's on poolbeg St. As much as I like these pubs I have been let down over the years too many times by the G quality.
