Not overcooking it is the key for my tastebuds (the same for many of the cooked veggies I eat). Same with carrots, I still like a little crunch to them. I think the recipes all look so delicious and worth a try. A cranberry/raspberry combo would be an exceptional choice in most anything. 😊 I want you to know how grateful I am for you. Your videos gently inspire me to step out of my comfort zone in the kitchen. Cooking is not a love language that I speak well. However, I have on occasion after watching a shared video from you surprised even myself with a meal that felt doable and was enjoyed by my hubby (no kids at home). Making Lefsa is a tradition that has been lost in our family for many years. My grandmother was the one who started making it at the holidays, going back to when this grammy was very young. When I think of holiday food, that is what comes to mind. I hope there will be a day that I will learn how to make it and then bring back the tradition to our family. Every Thanksgiving and Christmas, I make bell stuffing. I add the onions, crkery and ground sausage. I usecto add summer savory. My Nana sent me some from Canada. I still have a small amount in my freezer. I miss using it as its been in my freezer for some time. We can't find it in the states . I did once. It was the secret ingredient in the holiday stuffing since I was young. My mom and dad used it. Also mashed potatoes, , didn't matter the kind of potatoes, what truly mattered was the texture. Lumpy mashed potatoes with butter and milk, and black pepper. Plenty of pepper. Fir me and my sister, what makes it special is a potato masher my mom and dad used , when they got married. Stainless steel with a wooden handle, made by Ecko Forge. This masher is almost 66 years old. The holes make the right size lumps. My sister gave it to me last year. Now we can have those lumpy mashed potatoes all the time. My son 27 yo, loves the masher , he now uses it to make mashed potatoes..

My favorite memory food is lime jello with ground veggies, cottage cheese, and a splash of vinegar to make it no longer sweet. We grew up with this in the 50s and 60s and it still on my table today

So I am letting the episode play again while I write this lengthy answers for you. I am sorry if it turns into a novel. You have been warned....LOL. Again... Thank you. Making these videos is not an easy task. "Unless one has broken an arm, they really do not understand the pain." was one of my Mamma's favourite sayings. #BeckyAcreHomestead needs to see these as they look amazing and more on that later...but back to the task. As I am stuffing my face with a hot tea and peanut butter and home made jam sandwiches that my 17 year old has made me for breakfast.... I am so blessed. Better than any birthday gift {Which just happened earlier this week... yup... I am now 53 and so proud of it} is the beautiful kindness that my children show when I least expect it. Sigh... Love on your babies, they grow way too fast. OH... if you have the kids fill the puff pastries with stuff they like... they will devour it and have the pride that they made dinner.... especially if it is for Daddy and you! and it is not so messy. Again, back to the answers. 1. a) It is a huge answer for what dishes make the holidays. Funny enough...we have a list as we talk about it for months before... every single year and so they get ingrained. We are of a Polish Background so Perogy ... {Which is already plural} ...and my vegetarian hubby has taken it on that he makes them as his portion to making Christmas Eve and Easter. He makes a day of it with the boys and the girls get to go shopping at that point and both have prime time with a single parent. Being that he has a hard sail career and is usually away from home over 200 days a year. So they makes the potatoe and cheese, potatoe and onion, potatoe and pizza toppings.... {Those are made at the same time, but they are for the week between Eves...as a break from left overs} . 1. b) Potatoe Salad. Not just any potatoe salad... it is a three day work of LOVE. Except for the potatoes, every other ingredient is cut down to the size of a pea, so when you have a mouthful, you have some of everything. Hours of cooking, cutting and preparing that we have as a huge family have been able to streamline to one day of eight hours of work to make. My sister Jolanta is the master chef when it comes to the Eve and Easter dinners and hers is the standard we work towards. It cannot be the holidays without making three large Tupperware (c) bowls so there is enough leftovers for all the families can take some home with them. It cannot be frozen, only eaten within the week it was made. Every bite brings one of half a century of memories flooding into my heart. Some of those who made them have passed on [ this includes fur babies ]. Understand I come from the 6 kids my parents had, and our babies count as grandchildren 15, 16 and 17... there are great grand babies and even great great grand babies. Everyone one of them know of the potatoe salad and all adore it. 1. c) is not a dish itself but it is a habit. Nine Dishes and no food till the first star on Christmas Eve. I don't know the all the history to it, but there must be nine dishes and they are all vegetarian and considered peasant food. This makes us all appreciate the fact that we are blessed with so many joys from cars to health care to family to having exotic foods in winter. I love this so much. 2. The puff pastry that you put together was fantastic. I have done something similar, but made them bite size and then refroze them so that I can just put them in the oven when the first guests come on Yule. The kids always loved doing the mini ones because there were so many options and they were not pledged to eat a massive one if they didn't like a particular combo. 3. When raspberry season was upon us, I made the cranberry raspberry sauce, but I canned it, but in small jars so if guests who liked it come over, they can leave with a small jar for their leftovers. Homemade apple pie and pumpkin pie. Don't usually eat that stuff but must have for Thanksgiving because it was my little boys favorites and he is now 33 years old. He still loves it so I'll be making them along with dinner. 😊 Your recipes look delicious as always. 💕
Stuffing (baked in separate dish, not in the turkey) and also creamed tiny fresh onions (baked). I am allergic to celery, so I put grated carrots and a tiny bit of grated apple in my stuffing (along with carmelized onions).
For me, "the" holiday food is the turkey. Thanksgiving is pretty much the only time of year we eat turkey (we like it, just don't LOVE it enough to make it for everyday meals) so I definitely look forward to my once-a-year turkey. 😋 Oh and the bacon-wrapped deer loin my husband makes for Thanksgiving. He's been doing it for so many years I think I'd have to file for divorce if we showed up at my mom's house without it. 😅😅😅
You can replace the prosciutto with bacon, but I would choose very thinly sliced bacon then. Serrano ham is also a possibility ( less salty) or any cured ham. And pancetta. I found that people say salami aswell but personally I have my doubts about that one. As a vegetarian option portobello or shiitake mushrooms can be used or roasted and salted walnuts/almonds. Personally I would go for walnuts here.
Love your Cookinng vids! Q:: I thought that using a Mixer for potatoes, makes them all starchy and gluteny! and that we are supposed to use a hand masher?
Did you 👀 her WASH the potatoes after cutting them? Then, cover with water and boil. She did that to rinse off all the gluten. So then you will not have that issue when mixing them.
Thank you for the Recipes, Though my Thanksgiving this year has changed dramatically. My Sister Passed, my Brother took over 5 years ago, his Wife Cancelled so I can't let go of my Niece and Nephews and my BIN remarried without my knowledge. It's a mess and I am trying to navigate, so after months of family being mad at me for speaking my truth and their decisions in their part I am left with my Core. That is Myself, My Niece, Nephews, Cousins, and of course any homeless that need a meal. I am hosting a Brunch after Thanksgiving as well dynamic has changed for me. I am trying to navigate keeping my family together, but I at my age have to remove the adults and keep my kids as family. Sorry that I spoiled your video, but Thanksgiving in PA was my Favorite Memory with 50 Family, and now I at nothing. All your recipes look very good. Just a friendly tip, dont wear your sweater the next time you're working with chicken. It looked like it got on the chicken while you were prepping it.
Every Parchment paper I've seen all say not to use under the broiler. Most of them have a limit of 425 degrees for a temperature. What kind and where do you buy Parchment paper that can go under the broiler? I have often roasted potatoes, carrots and vegetables but have to skip the final broiler period for fear of the paper catching on fire.
I really like your videos and recipies I didn't like you putting your hand in your hair so many times. I had to move on after the 10th time, we learned to put our hair up when working with food. People learn from you.........
I usually have my hair up and out of my face, however I get tension headaches from time to time and needed to leave it down. Honestly though, I’m cooking for my husband and kids, so I don’t think it’s a big deal 🤷♀️

All your recipes look very good. Just a friendly tip, dont wear your sweater the next time you're working with chicken. It looked like it got on the chicken while you were prepping it.
Every Parchment paper I've seen all say not to use under the broiler. Most of them have a limit of 425 degrees for a temperature. What kind and where do you buy Parchment paper that can go under the broiler? I have often roasted potatoes, carrots and vegetables but have to skip the final broiler period for fear of the paper catching on fire.
I also hat 9:46 e to hear people chew and I hate to say most of the contact creators make an awful noise chewing and usually have there mouth open.
Clarification on the potatoes. Video says 1-1/2 cups white cheddar while recipe says 1/3cup? Typo or did you change it up after tasting?

I usually have my hair up and out of my face, however I get tension headaches from time to time and needed to leave it down. Honestly though, I’m cooking for my husband and kids, so I don’t think it’s a big deal 🤷♀️
