I worked as a cdp at a one michelin restuarant in sweden and we had apart from cooking the food, go out and present the food witch was scary and fun as hell at the same time. Im really impressed with the waiting staff here. They really have a lot to remember and i would certainly fuck up alot of those presentations

looks like 19 ultra flavour bombs.. my pet peeve about one is having those onion skins as decorations hahah.. if it's not meant to be eaten, don't put put on the same plate as the edible food..

I find the dishes excellently prepared but didn't you feel the waiters were a bit tedious and slow? I hear so many "eh uh ehms". A better prepared announcement and explanation of a dish would create less awkward time at the table..

The dishes are extremely small and support the idea that you need only first bite to appreciate the food. Meanwhile at the end I was full in spite of a small sizes.

Went here last September and was the biggest disappointed I have ever experienced in a restaurant never mind a supposed 3 star restaurant (definitely not 3 stars) the menu was way too long, I couldn't remember anything I tasted the day after. There's was no concept or story to the menu either just random plates that didn't taste amazing. The staff were really strange, forcing the service out and felt completely rushed.. I understand this was through covid but you should have closed instead of pretending to be 3 star without your head chef jodi cruz. Felt more like there was a bunch of students in the kitchen cooking while all the big dogs where away. Honestly I would only give it a one star and thats being generous as iv been in a lot better one stars that this supposed 3 star.

My experience with authentic Spanish cooking was when I visited Vigo during my stint as a PhD student in Europe. I really liked the food. Nothing as fancy as this, of course, but very tasty indeed. Btw, that waitress is cute! She doesn't look Latina. She looks more Southeast Asian to me. Malaysian? Indonesian?
This modern haute approach really should curtail the monologue. In these spots, FOH is regarded as significant as BOH, and they’re being overbearing with the info to prove their worth. A perfect FOH is never seen yet will pick up a dropped fork within five seconds. This is too much.
When you have to explain a dish and how to eat it,, you can brace yourself for a lot of nonsense on the plate. Don't eat the onion peels sums up this lunch.

Actually you can compare a 2 michelin star dish to a David by Donatello and a 3 michelin star dish to a Guernica by Picasso. Everyone may appreciate the David why only a few can understand Guernica wasn't drawn by a John Doe high on LSD. And that wasn't a compliment. Appreciate the effort but I will never understand why the 3 stars restaurants exist, in the 1st place.
The worst 3 star michelin ever, who in their right mind put the resembles of larvae on a plate? And the next dish the only thing remains in one's mind is the black af fish carcass. Many 1 star michelin places outperform this overpriced shithole.

I wholeheartedly agree, and if you can't distinguish what is edible on the plate, something has gone wrong.
For those who are saying this is a bad experience. Because ur meal is being explained well u can request them not to do that.

chinese uses eel extensively in guangdong, yakitori sauce is basically soy and sweet wine reduction
honestly the whole menu seemed to lack focus. The dishes looked mostly nice but I'm not sure what the angle is.

Yes, pigeon is sometimes served in fine dining restaurants, and even though it's a bird, it's red when cooked. It's actually very good!
