I have to admit, when you first purchased this place, I couldn't in my wildest imagination see how it could be transformed into anything habitable. Now, as it comes together, I can see that it will not only be habitable, but absolutely beautiful! You are a visionary!!!
It's hard not to doubt sometimes but next time you'll go into an Edd project with the the mindset "how's he gonna do that", and it's rather illuminating on a whole new level of believing in 6 impossible things before breakfast!! 🤣😁🤪❤️❤️

My folks were from Quebec and settled in the States. We only spoke French at first but, once school started, we kids migrated more and more to 'mixed' conversation. On my last house I did all the plasterboarding of the ceilings exactly as you have. The specialist who came in to skim them all pointed out that I had done it wrong! Apparently you're supposed to stagger the boards to avoid having lots of long joints lines. These are more prone to crack as the house moves and the humidity changes through the seasons! On a more positive note I love watching you're this program. Your progress is incredible to see.
Great decision to keep the stone exposed, it just adds so much. I like the plastic protection on your floors, it makes sure that you don't end up with a huge mess that could destroy the new floors. Great progress again.👍

Re the rock walls. I live in a log home in northern Minnesota, USA and we get very cold in the winter and hot in the summer. We have had an actual temperature of -40º F in the winter. Our home stays comfortable no matter the outside onslaught and the logs aren’t as thick as those stones. You need have no worries. 😊

I only wish we’d of had one of those plasterboard hoist when I built my house forty years ago. All we had was a big tear…. Oh my, my husband eventually trusted me to put the screws in, I’m not guaranteeing they were as straight as Louis💕😊
Can't say I am a fan of exposed stone or brick inside a house, but You Do You. I live in a much colder place than Southern France and I like everything to be warm to the touch!
With drywall, you should stagger the joints instead of putting full sheets side by side, kind of like a brick wall. It creates a wall, or in this case a ceiling, less likely to crack. Also it might help if you get a long straight-edge to mark where the battens are before you hit it with screws. It's all going to be painted later anyway

I helped a friend drywall his house and he had 12 foot ceilings on the first and second floors. We used two 10 foot ladders, two people, got it done rather quick and didn't have to play around with the lift your using. I imagine it is good if you are doing it alone, but with two people, a lot easier and quicker to pick it up and put in place on ladders.
