    Coconut Chicken Curry
    Serving Size: 4
    2 Pounds of boneless chicken thighs
    ½ Onion thinly sliced
    1 minced onion
    1 teaspoon of grated ginger
    ¼ cup of cilantro
    4 minced garlic cloves
    4 Cups of Water
    1 Tablespoon of cooking oil
    1 Tablespoon of curry powder
    4 Tablespoons of dried basil
    ½ Teaspoon of chili powder or paprika powder
    ½ Teaspoon of black pepper
    ½ Teaspoon of cardamon
    1 ½ Tablespoon of corn starch
    2 cups of cooked rice
    1 can of coconut milk

    Corn starch is better dissolve in cold liquid, because it gets "cook" immediately upon contact with hot liquid causing lumps, thats why you had difficulty making the slurry smooth

    Mine is in the pressure cooker as I type this comment. My wife and I were talking about what to eat. I have been wanting to try a curry dish in our instant pot. Found you and so it goes. I went with the chili powder. Unfortunately cilantro is not in our fridge. I don’t think it will matter that much. Hoping for the best. Thank you for sharing.

    Cornstarch does not dissolve well in hot liquids. Should use a cold liquids.

      Definitely, always mix your slurry with cold water else it goes lumpy

      It can be sieved or sifted into hot liquid, if its mixed while doing it, it won't congeal

    Yes and your slurry ,should have been cold water and cornstarch not hot..

    I can't wait to try this recipe! Our family likes lots of broth over rice, could we make extra broth by doubling the recipe and omitting the extra portion of meat?

    Hi! I’d like to add some potatoes to this, would you be able to tell me at what point I’d add the potatoes?! I’ve never used the insta pot so It’ll be my first time ☺️

      If you like to add potatoes, I would recommend steaming them first with instant pot. You can add them once curry is done!

    No mention of dried Basil in the video but recipe instructions calls for 4 Tbs of it. Hope I haven't ruined it but I'll add the Basil and give it a try.

      At 1:33 she mentions the dried basil in the ingredients then check it out at 5:08 time stamp, she adds the dried basil to the pot. This may help.

    Can you add carrots and potatoes? I love vegggies with my curry

      Absolutely! I would cook them separately, perhaps steam them first on instant pot and add on later when curry is done!

    There are so many things wrong with this recipe. If you want an incredibly boring and bland curry, this is your recipe.
