Hand stitching a punching bag would be a major task! I’d use a milled leather around 5-6 inches. Milled leather would be a little softer when hitting it without gloves. I’d use thick veg tan skirting for the attachment points. Stainless steel rated d-rings. Solid copper rivets to attached veg tan to the body of the bag

John James aren’t expensive. I used the the 00 saddler needle
