I tried this recipe. Since I live in Malaysia ( hot and high humidity) leaving my dough overnight to ferment caused over fermentation. Dough smelled of alcohol in the morning. I’d ferment it in the fridge the next time or ferment it for a much shorter time. I’d recommend this method for those living in hot or tropical countries.
The bread turned out tasty, salty and oily but not too oily at all. I’d make it again and encourage you guys to try it. Its perfect with black coffee with some avocados on top. Thank you Samin and Brad. ☺️
Hey Adeline! How long would you recommend for the fermentation if leaving it out? 6 hours?
I relate to this so much... Since I live in Indonesia, my fermentation project usually over ferment too.. So with the fermentation recipes I usually let it ferment in room temperature shorter then keep it in the fridge
I only make recipes like this when I have time to babysit dough for at least 2 days. Fermentation is different for everyone depending on the climate, time of year, and your thermostat. Sometimes you can use it to your advantage though! For instance, when you're on a schedule or working with high-hydration dough on a hot, humid day, you can proof your bread outside.
I don't live in a hot climate, but I do love making focaccia, eating avocado, and drinking black coffee - so thanks for the combination advice!

Focaccia bread:
*Warm water- 600g ~2 and 1/2 cups
*Yeast- 1/2 tsp (active dry)
*Honey- 15g
*All purpose flour- 800g~ 5 and 1/3 cups
*Salt- 2 tbsp~ 18g
*Olive oil- 50g~ 1/4 cup
-First add water, then oil to flour
-Rest for 10 to 12 hours
-oil cookie sheet and put dough on it
-rise again for 15 to 20 min
*Water- 80g~ 1/3 cup
*Salt- 5g~ 1 and 1/2 tsp
-poke holes in dough
-Brine dough for w/more oil for ~ 15-20 min
-pre heat over to 450f
-Add flaky salt to focaccia
-bake for 20-25 min
