I noticed you touch your cakes without messing them up. Do you keep them in the freezer. Beautiful cake
I do flash freeze for about 10 to 20 minutes so that the surface is firm, but the inside is not frozen:)

Also at the baking school we were taught not to stack tall tiers of sponge cakes on top of each other even with supports as there is the danger of them collapsing. Does that worry you at all.
With dowels none of the cakes is actually putting ita weight on the one below.

Have you ever experienced the icing of the cake bulging out due to the butter cream.
Or is there a way to prevent such a disaster from happening.
For me this combination is a no no.
Underneath the icing I always use ganache.
The air pockets happen to me when the cake is too chilled before I apply fondant on it. You should go round several times pressing the fondant down, and avoid cake being cold. You notice she flash freezers for 20 mins so the frosting is cold, not the cake as opposed to say leaving it in the fridge overnight to chill all through

Each tier has 3 layers. The entire thing is about 327 servings.
