- New Orleans native Charlie Andrews demonstrates how to make New Orleans style Shrimp and Eggplant dressing. The dressing does have some Italian influence. It consists of roasted eggplant, Lots of shrimp, trinity. Italian breadcrumbs, eggs and my favorite blend of New Orleans seasonings. It also has a Parmesan cheese Italian bread crumb topping. This recipe calls for 12 or more servings. It's great for the Holidays, flavorful and absolutely delicious. Hope you all will give this classic dish a try.

Update 9/8/2023- You can also add 1/2 or 1 pound of crabmeat to this recipe. You can add it after you add the shrimp tails. Hope this helps!

Charlie you always deliver, always but this recipe is truly beyond belief. I love those gorgeous shrimp that you use they are so beautiful. My mouth was salivating the entire time I was watching this video. My goodness I can only imagine how amazing this is. Hey Charlie, you are bringing back memories to me. Food looks amazing. I'm from Cane River area in Natchitoches Parish, and my Mom made a very similar dish to this but she used chicken. I haven't had it in years, but it always left a good memory in my mind on how good it was. I am definately going to make this. Thank you for all the good creole cooking recipes.

Have always loved seafood. I make my mom's/ grandma's mushroom stuffing regularly, and usually mix a portion with a couple of pints of oysters. Will definitely be trying this. We used to vacation on the Eastern shore of Chesapeake bay and have a family place there and at lake erie- love seafood. My squad captain asked once why my duty days always filled up so fast on the schedule? I mentioned that she should stop in. When she did I had sausage gravy and biscuits on, and mom's/ grandma's sauce for Italian sausage sandwiches simmering for later in the day -- the Epiphany moment.

That's a really interesting dish, Charlie. It seems like a lot of people are somewhat intimidated by eggplant. I love to cook with it and if you're a vegetarian - it makes a satisfying meat replacement. There is also a world of difference between a Louisiana (or Gulf) shrimp and a farmed shrimp from Asia. Yummy!!

No way! I don’t know how I missed this. This is one our favor dishes. We cooked with seafood and ground turkey and 😢homemade marinara sauce as a topping 🤤. We used to order from the pie man across the river back in the day!
