What to do with Tofu! This idea and base recipe came from a @HalleBurns short that kept popping up in my feed with a few different uses for Tofu turning it into a tofu dough! and I wondered if I could turn this base tofu dough into bagels and I was SO SURPRISED !!! You're going to LOVE this recipe!

That’s awesome! Didn’t look closely at the thumbnail and presumed it was a regular bagel with tofu spread. Incredible that you could make the bagel with tofu in the dough!
ahahah yeah its kinda wild right? it comes out nice a dense but also pillowy!! It nailed that perfect bagel taste!

I used silky tofu once as an egg replacement and soy yogurt to make brioche buns for a good friend of mine.
I had to experiment a little with the amount of flour and yogurt to get the consistency of the dough right.
The result was so good that I couldn't tell the difference between my normal dough with eggs and buttermilk.
I had not considered using tofu like this. My baking endeavors grow ever more diverse.
It came out wild!!! So excited about it!

Yes, adding in some rising power (yeast/baking powder) makes a huge difference.
i just got around to making those dough balls - really impressed! these are a fantastic high protein snack that you can season to taste like whatever you're in the mood for, i went with garlic bread. i also baked them in my oven since i don't have an air fryer, and while they didn't come out crispy they did come out bready and delicious.
Reminds me of the 2-ingredient dough with flour and yogurt people were making. I'm excited to try it with tofu. I'm loving SauceStache's tofu era!

Have you ever tried the target brand good and gather buffalo cauliflower nuggets? ive been writting to the co for 2 years asking them to make a plain one so we can use different sauces. I love using tofu in unexpected applications and implementing it into a dough just makes sense - this is what people do with cottage cheese to make high-protein bread right? :D The double tofu bagels must have been great!
Also, you've partnered with Henson Shaving a couple of times already and I am becoming more and more inclined to buy one for my boyfriend - the sciency aspects definitely got me here!
The initial base recipe really makes me wonder about sweet options. Like cinnamon puffs or something. Or blueberry flat bread.

Soooo these are already a little denser than your normal bagel and spelt flour doesn't rise as much making a little denser bread. ( I love spelt flour btw) So you can use it but I would experiment a bit.
I wonder if you could do 50/50 with bread flour? Unless you are trying to complete avoid the bread flour.
But try it out, maybe even more resting and raising times, I did a quick version if you ask me, maybe with the spelt do an overnight.
There are definitely possibilities here that could be really good!
Amazing bagel! I wonder if you could use VWG (vital wheat gluten) instead of flour in all these tofu recipe ideas?
So this one wouldn't work out with just vital wheat gluten.
Gluten is just the structure of the bread but there needs to be something for it to hold onto.
Gluten and tofu would be protein and protein and would just come out like a solid block or airy cheese if it does bubble at all.
@@SauceStache Hmm. If this recipe simple replaced the flour with VWG and left out the yeast, you'd end up with bagel shaped seitan, right? So why wouldn't adding the yeast serve to make it "airy seitan"?
You should get Tofu Cookery by Louise Hagle It is absolutely perfect if your trying to incorporate more tofu in your diet.
Why didn't you use the Kitchen Aide mixer with the dough hook to knead the dough for 5 minutes, especially since you already had the dough in it?

This is the Typhur air fryer!! I had a code for their website, not sure if it still works. I HIGHLY recommend it, We love it, my parents love it. It just cooks really well and really evenly.

I've used the Weight Watchers 2-ingredient dough recipe using GF flour with excellent results. I did use dairy yogurt. Quick google search. Cheers!

My gluten-free heart sank. I thought it was mostly tofu with maybe some starch or something, but the APF is a no. And before you say "it should work with a GF alternative", it won't. I have to make my own alternative which isn't as versatile because the ones in the store, while they work, they use ingredients that I'm allergic to. 😔
I love watching all of your food innovations. Sadly as a celiac almost everything you make is not possible for me. (I think with this recipe, the missing gluten in the flour would be a catastrophe to the recipe)

@@SauceStache This is the first one in recent memory that actively competes with your voice. I should have been more clear (this vs. the). Most of the time it's easy to mentally cancel. I didn't realize how much I was cancelling it out, I guess. I'm the odd one in that RUclips add-ons don't do anything for me. If the content is sufficient to hold my attention, it only detracts. If not, then a snappy soundtrack isn't going to make me stay.
