Pears are one of my favorite fruits; the flavor is gentle but very complex and as satsifying as a perfect melon when you get a perfect pear. I'd never have thought to use them for a bold-flavored savory dish, therefore, and I am so amazed at your results. Will give this a go the next time I get pears; thanks for posting 🙂
The combo of kombu, wakame and nori works best for me in terms of making celeriac root (classic in Polish Christmas vegan alternatives ;P) taste and smell like fish so it could probably help a little with the pear too! I do love creative sushi toppings though and I am sure this must have been fantastic!
Also you could use some agar agar a little beet juice lemon and pink sea salt and msg do a nori reduction make geles and toss in some popcorn oil so then you have this buttery fishy umami faux caviar on top of your faux shushi little crisped rice and fresh scallions to drive it home😉

That! I noticed exactly that when I ate a pear and cream dish recently! It tasted like fish for some reason and I was certain it had fish in it but no, it was literally just pear and some spices! I thought I was going crazy for some reason.
What about chayote or papa del aire, i think that would work perfect! I dont know how easy is to get it there tho. Also what abt freeze drying the fruit and rehydrate on the brine

Now some people believe eating oysters is vegan, but I would say it's an animal worthy and deserving of a life to live, no matter how much we believe it feels or doesn't. We have plenty of alternatives - like kombu, kelp, etc. - why bother animals for something like that?
While there might be farms that use this method, it doesn't seem logical to use oyster shells for a growth medium. I've been to a few laver farms; the harvesting did not involve clam shells. Laver does not require oysters or their shells to grow, and I've never heard of this method being used, though I can definitely see a situation where a company might combine an oyster farm with a laver farm given the mutual benefits to the ecosystem.

oh so sorry, I wonder what happened. You can see in the video that the fruit wasnt cripsy on my end at all and the texture wasnt close to fish. I've gotten a few comments from people that have tried it and loved it. Can I ask what pears you used and the vinegar you used?
No offense, but you don't have to call this "vegan" sushi. Sushi just means "Sour rice". It's sashimi that just means stab, but refers to fish. You can go to just about any sushi restaurant and just order an avocado or cucumber sushi. Just sayin.
Your titles are really damaging to the movement. A non vegan laughs and makes fun of this preposterous claim. Confirmed- vegans are a bit crazy. Not a good look. I’d say drop the hyperbole and stop calling fruits and vegetables animal products. Have to be aware of how this stuff is perceived. While what you’re making may taste good and be fun to make, pears DO NOT taste exactly like fish and tofu does not taste exactly like chicken etc.
Try this recipe on some sushi rice prepared how I made it and come back and tell me this doesn’t taste exactly like real sushi. Shoot blind fold a sushi lover and give them this and make them guess which fish it is. I’ll wait. Then you can apologize. And no my titles are not damaging anything.
let the pickled pear sit overnight in a container with a wakame and msg "brine" to give it better fish flavor

the peculiar flavor of seafood mainly come from iodine, there is some in most table salt but you can add more to increase this fishy flavor

Its not that sweet, when you pickle it the acid kinda tampens the sweetness a bit

It does not work. The texture remained crispy fruity and the pears were still sweet.
