it is no more dangerous than sausage meat. In fact sausage meat has more additives in it to cure and preserve the meat. As this imitation crab is not a cured product, refrigeration and freezing are used to preserve them... this means less chemicals.
I'm from overseas..... it's always called Surimi in my area of the world. But it is commonly understood that it is a cheaper imitation of crab/crayfish/lobster. I've never had a problem with quality of it... it seems to be fairly consistent in three Pacific countries that I have lived in.
I only eat crab from where I grew up (near the sea), so I'll eat pollock from time to time. I'll eat crab directly from the shell, but I often make recipes with pollock. It's not as good by itself.
Bought it as a college student. I thought it was so bad that the next time i was in the store, I left a note in the case that said, “This tastes like sh*t.” The store manager knew I did it but couldn’t prove it.

this fish. Correctly labelled as IMITATION Crab. SO to add to your advice... If you want Imitation Crab, Buy Imitation Crab. (As long as they don't try to pass it off as real crab meat who cares) I have found it to be a tasty meal component, particularly in Summer with salads etc.
I love the imitation crab salad at the Sizzler salad bar. Yes I know it’s not real crab but it’s made from fish . And fish is good for you

I think it means cooking from frozen, or unthawed.
Unthawing is freezing
You put it in the fridge for a few hrs or the bag under cold water for an half hr then change the water and do another 20min

To thaw is to go from colder to warmer so to unthaw it sitting and getting colder I guess
