Scratch Cooking a BIG Meal in the Homestead Kitchen

- Hey friend, we are hard at work in the homestead kitchen today cooking up a big meal from scratch for our friends who just had a baby! On the menu is lactation cookies, granola bars, salad and homemade dressing, bread, a yummy pasta dish with chicken and some strawberry tiramisu!

Lactation Cookies:
¾ cup whole wheat pastry flour
2 Tablespoons brewers yeast powder
2 Tablespoons ground flaxseed
2 Tablespoons wheat germ
½ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon sea salt
½ cup salted butter
1 egg
½ cup granulated sugar
¼ cup light brown sugar
1 teaspoon pure vanilla extract
1 ½ cups old fashioned oats
1 cup mix-ins optional: chocolate chips, raisins, coconut
Bake at 375 for 8 minutes

Lemon Ricotta Pasta:
10 oz Rigatoni
1 cup whole milk ricotta
6 oz baby spinach
1/2 cup Parmesan cheese
2 lemons, zest and juice
1 tsp minced garlic
drizzle of olive oil
salt and pepper to taste
lemons for serving
Poultry Seasoning:
3 Tbsp dried basil
2 tbsp dried thyme
2 tbsp dried oregano
2 tbsp dried marjoram
1 tbsp dried rosemary
2 tbsp paprika
2 tsp onion powder
1 tsp garlic powder
1tsp ground sage
dash of nutmeg
Strawberry Dessert:
2 cups fresh strawberries sliced
3 tablespoons granulated sugar
1 tablespoon fresh lemon
For the Whipped Cream
1 1/2 cups heavy whipping cream
2 teaspoons pure vanilla extract
3 Tbsp granulated Sugar
For the Cream Cheese Filling
8 ounces cream cheese softened
½ cup sifted powdered sugar
2 heaping Tbsp strawberry jam
20 lady fingers
orange juice for dipping

A good parchment paper trick is to crumple it up and run it under water and wring it out then it will be really easy to work with. Love all the energy and great things you are doing. ❤

Everything looks great. My husband has 6 siblings and it became my job about 10 years ago to make freezer meals and lactation cookies whenever babies arrive. I also knit baby blankets and monogram keepsakes for them.

What a beautiful presentation of food for your friends and your family. They surely felt loved and cared for when receiving your gift. Congrats to them as well for the new addition to their family. The salad looked amazing Kelsey. So fresh and a beautiful representation of the season! I will be spending the day in the kitchen today and although I’m not fond of these days, it’s special in that I’ll be working primarily on desserts and a few other things for a gathering tomorrow with my side of the family to celebrate 4 June birthdays and Father’s Day. Our chickens free range and I didn’t get my strawberries fenced off before they found them. I’m not getting any this year……at least not from my own bed!

Our family have this great summer pasta dish. Cook up a linguini till "to the tooth", drain, but save 1/2 cup of the pasta water. In the cooking pot, add the pasta water, 1/2 of dense sour cream 18% if you can find it, 1/2 cup of either jam, jelly or fresh macerated fruit. Mix till no lumps. Add in pasta and serve with a dusting of icing sugar... Kids think they are getting dessert... If you want to bump the protein... add some ricotta cheese. Hugs from Esquimalt

Hi dear… that spot on your nose is probably your skin responding to the sun. You looked a little sun kissed. Pls make sure to put extra SPF on the bony prominences of your face. I’m just as pink/pale as you and my dad. He has over 30 melanomas removed from his face and arms. So I’m sure careful. Yes, I’m a nurse and do give that advice to everyone who spend a deal of time outside.

Hmm maybe, I was out in the sun and had noticed my nose was a little pink, but it also could have been a bit of strawberry 😂 Any advice for someone who is allergic to spf? I break out in hives whenever I use something with spf in it! I do try to keep exposure to a minimum and go out when the sun is low, wear hats and light long sleeve shirts. I usually slather on tallow for protection and that seems to help!

Wear a hat. I have had so many skin cancers removed that I have lost count. Some were simple removals, others more involved. You have a very fair complexion, so you are more susceptible.
@@seedandsparrowhomestead Are you allergic to Zinc ? Plain old Zinc is perfect Sun Protector. Sounds funny but you can use a thin amount of Butt Paste. Try on your inner arm first and make sure you don’t react.
0:10 All those plastic bags .. just bring your own (non-plastic) bags please. OMG
0:33 this is what I mean .. it's just sick .. a whole bag for a single bottle. which is .. a plastic bottle.
Please be mindful of the amount of plastic you're consuming, this is borderline insane.

I shop at Walmart once in a blue moon. I usually shop at Costco(no bags) and Amish stores( cardboard boxes) I forgot to bring bags this time.
