I'm interested in the discussion that was stopped at 19:16, what changes between using an F or G model bridge on a Jazzmaster or a Stratocaster type of guitar? Are both compatible?

It's the string height from the body top that determines if the G or F model is the correct fit for a guitar. The G model supports higher string action from the body top while the F model has a much lower profile.
