    Fantastic sweater and fantastic cranberry sauce. I make mine almost exactly the same way, just without the port because I don't like the taste of port....I wanna taste the cranberries! I've got about 6 jars in my cabinet ready to chow down. Love cranberries so much!! I even eat them raw!

    I've made cranberry sauce several times and man are cranberries tart! I think most people would need to add more sugar than Gennaro calls for. Of course he boosted the sweetness by adding some port, but I'm guessing his concoction would still make you pucker up.

    We don't eat cranberry sauce for christmas in Denmark, but maybe I should request it this year - it looks so good!

    what happens with the clemantine peels do they stay in there...i dont really like the idea of them remaining in the sauce

    I've heard from many other chef's that you are not supposed to stir while the sugar is dissolving, how come you do it? I would be really grateful for an answer, ;)

      shouldn't stir if making caramel but seems he was dissolving the sugar in the port instead.

    Can I reserve the port and use it towards the end so that not all the alcohol evaporates??

      probably not as the cranberries need some liquid to cook in, you could add some more at the end but be careful not to make the sauce too runny

    I'm just leaving this here for next year!
    Add 100g Soft Brown Sugar Into warm pan
    Add a splash (Italian Splash = Half a cup!) of Port
    Peel two Clementines into pan
    Squeeze the two clementines into pan
    Add three Cloves
    Add 500g Cranberries
    Add three Bay leaves (scrunched)
    Add One Stick of Cinnamon (rolled in hands)
    Simmer for 10 - 15mins
    Spoon into jar, turn upside-down, tap.
    Cool, refrigerate for up to 2 months.

    You should try using propane to cook cran berry sauce! It burns much cleaner and smells much better(;
